Day 3 of our 100 day challenge has went really well food wise. No mayonnaise fiasco today so that is a plus :) I am putting that behind me and likely doing without mayo for the 100 day challenge.
Breakfast for me was the same: granola, banana and milk with a coffee. When I find something I like I tend to eat it over and over. The fact that's it's quick and easy helps a lot as well.
Lunch was a chicken sandwich which was excellent. I made it on my own toasted whole wheat bread, a little of the homemade mayo (just can't throw it away), a little butter, roasted chicken from last night's dinner, lettuce and tomato.
Finally, for the grand finale, we had veggie fajitas with homemade whole wheat tortillas that we made ourselves and they were pretty darn good. Hubby thought they were excellent. Dinner did take awhile to prepare and make and Hubby helped, but the tortillas can be made ahead of time and frozen for later use which will help a lot with time.
Day 3 has been a success :)
