Day 32 - Air Supply Tonight!!!

Going to see Air Supply tonight, Woohoo! Can't wait :)

Here's the low-down on what I ate today: Breakfast this morning was granola with milk along with my morning coffee.

Snack today was with the children in preschool; I had apple and orange juice.

Lunch today was leftover chili from last night's dinner. It was better today, the flavors had combined and the extra chili powder I used by accident had mellowed a little :)

Dinner tonight was Beef Stew. I always made a beef stew recipe using the packet of beef stew flavoring mix and white flour to thicken, so I needed to tweak my recipe to make it real food friendly. I played with the recipe a little and ended up with a great tasting stew/soup. I used chia seeds for thickening and it worked great. I don't really like my stew extra thick but didn't want it just soup either. The chia seeds worked great, a slight thickness to the stew. This recipe is a keeper :) Also, keep in mind I am not a big meat eater (I was vegetarian for over a year) so I tend to use less meat in dishes than most people would. For this recipe I used 1 strip loin steak, it was 8 oz but that was before I trimmed the fat from it. I would recommend people using at least a pound of meat in this stew for a more traditional beef stew.
