Day 4 - Going Strong

We are still going strong. Day 4 is pretty much finished. Changed up my breakfast this morning and had whole wheat toast with peanut butter and strawberry jam instead of my usual granola, with a coffee of course. Lunch was a left over fajitas from last night's dinner. Didn't really have a snack today but did have a few picks of food due to unexpected visitors. I had 2 of my nephews for most of the day so when they ate I often had a bite here and there. I cooked them eggs and made toast and jam for lunch (didn't have many options here in my child-free, real food, not nut-free home); I had a couple of forkfuls of scrambled eggs. Afterwards I made them popcorn with butter and I had a little of that as well. I did have a glass of coconut water, which both boys tried; the 7 year old said it was ok and drank a little, the 4 year old did not hide his dislike for it at all and needed milk to get the taste out of his mouth.

Dinner was great tonight and so easy because it was a mix-up of last night's fajitas leftovers. We had quesadillas (I used this quesadillas recipe as a guide) and they were excellent. I already had the whole wheat tortillas made and leftover from last night, and I used the left over fajita veggies as well.  I added 1/4 cup of corn and some shredded mozzarella and white cheddar cheeses. Served with salsa they were one of my favorite dishes so far. Hubby liked them as well but said the fajitas were just as good. I think I liked the quesadillas better because there was more ooey gooey cheese, which I love.

Had dinner a little earlier tonight so may have a snack later if I feel I'm getting hungry. Already know what it will be. I made a small batch of blueberry jam today (used the strawberry jam recipe and just swapped for blueberries) with help from my nephews. I haven't tried it yet but am thinking it will be great in yogurt with some granola :)
