Can't believe we have reached 40 days in our 100 day challenge. Wow! Almost to the half way point and still going great. I will admit it is a lot of work...a lot of cooking, preparing, planning and dishes. We are doing this challenge in our family of two and I'm sure it would be so much harder to feed a larger family, and to include kids. It is possible though, looking at the 100 days of real food site, and other similar sites; many families are taking the challenge. Some people are opting for mini challenges instead and this may work better for you instead of taking on the all or nothing mentality I seem to have :)
Breakfast this morning was the last of my granola (which means I will likely be making a fresh batch this weekend), a banana, milk, and my morning coffee.
Snack was with the kiddies again in preschool. I skipped the party food and just had some banana.
Lunch today was the leftover Cod Au Gratin recipe from last night. It was even better today if that was possible.
