Day 45 - Almost Half Way

Breakfast this morning was a couple of boiled eggs with butter and salt along with my morning coffee, but this morning it was a decaf coffee. Think I will eliminate the caffeine for now and see how I am in respect to heart palpitations.

Lunch today was leftover Bruschetta Chicken and a rice blend (no asparagus because we ate it all last night with dinner). It was good left over as well. I liked the Bruschetta mix better left out at room temperature instead of cold from the fridge.

Snack today was a little fresh pineapple and a piece of coconut chocolate, made fresh today :) I had to try it to make sure it was edible :) It's the regular chocolate recipe with added toasted coconut. I also stopped using the food processor and I just mix it by hand, comes out fine every time.

Dinner tonight is homemade pizzas. I made 2 pizzas with the one dough recipe. I don't like thick crust pizza as much and the first time I made this recipe the dough was ridiculously thick. I made the same amount today and got two good-sized pizzas out of the one dough recipe. I made a simple Margarita pizza and another pizza with tomato, prosciutto and pineapple. Looks good :) I would also suggest increasing the cooking time by a couple of minutes as well; when cooked for 10 minutes I find they are still a little doughy in the middle. I also recommend letting the pizza stand at least 5 minutes after taking it out of the oven, before cutting and serving. This helps the pizza firm up a bit as well.
