Breakfast this morning was whole grain toast with almond butter and Strawberry Jam. I also had a Pumpkin Chai Tea with maple syrup and whole milk.
Lunch today was leftover Cajun Alfredo with Shrimp from the 100 days cookbook.It was excellent last night for dinner and was still great, if not better, today as leftovers. A new family favorite here.
Snack today was plain yogurt (not low fat) with jam and homemade granola. A great snack. I also had some iced tea, made myself with honey for sweetness.
I did my yoga workout again today and am ashamed to admit I actually hurt this morning from doing it yesterday. That's how out of shape I am because it is not an overly strenuous exercise video. Oh well, that's why I am trying to stick with it.
Dinner tonight was Hubby's idea. We are having homemade nachos. Haven't made these since our first challenge about a year ago. Not sure why because they were delicious. I made my own taco seasoning and layered ground chicken, veggies and homemade corn chips. I also made homemade guacamole. For the guac I just mashed up an avocado; mixed it with lime juice, and spices. Very simple but tasty. Yummy. Having this now with a beer or two :)
