Day 52 of our 100 day real food challenge is going well. This morning I had my homemade granola with blueberries and milk; along with a decaf coffee (with maple syrup and cream, as per usual). I had forgotten I had bought blueberries this weekend and was a little disappointed when I had banana with my granola yesterday morning before realizing I had blueberries. Had them today and they were really nice :) They were not local seeing the time of year and all but they were good quality. Lunch today was my attempt at a tuna melt. I enjoy eating canned tuna and would often have it in a sandwich or as tuna salad or a tuna melt, but mayo is not an easy food to buy with all real ingredients. I haven't found one yet. Most of the store-bought mayo have added sugar or use canola oil (which we are not eating in our 100 days), or other additives. I did attempt to make mayo early on in our challenge. I made it with all extra virgin olive oil and the olive taste was just too over-powering. I may try it again, maybe with avocado oil next time. Today I made my tuna melt with plain yogurt and it was pretty good. Not exactly the same but creamy and still tasty. I will be having it again, like tomorrow for lunch because I made enough tuna mixture for 2 servings and only ate one :)
