Both myself and Hubby are missing pub type food with a beer so we are going to try nachos from scratch, right down to making the corn chips made from tortillas. Now Hubby is working late tonight so we will be having a later dinner than usual. I figure nachos will not be great made and left to eat later. So, while I wait, I had some of the leftover stuffing from the stuffed peppers from last night, instead of freezing it. I heated it up with a little cheese and had it as an appetizer :) Excellent (The picture is a small side plate).For the nachos, I fried up extra ground chicken with taco seasoning and onions when I was cooking the stuffing for the stuffed peppers last night. I plan to use that on my nachos tonight. I am making corn chips from all natural corn tortillas and baking in the oven with a little avocado oil and salt. Then simply layer corn chips, re-heated ground meat, diced veggies (onion, green pepper, tomato) and a mix of shredded mozzarella and cheddar; repeat layers. Bake in oven until heated through and cheese is melted and golden. Serve with salsa, avocado, and beer :)

Bought it at Costco last week. First time I ever used it was tonight. Found it great. It has a really high heat point and is very mild tasting
