Breakfast: Oatmeal with almond butter, raisins, coconut, pecans, and strawberries. It was good but I will admit I do miss a little maple syrup for sweetness. I plan to add that back in when I reintroduce foods :)
Supper: Salad with leftover Almond-Flax Chicken. I am not a big salad lover but I will admit this was a really good salad. I used two types of hydroponic lettuce from Lester's. Also had local tomatoes and cucumber. I added red bell pepper, olives, pineapple, leftover chicken, and topped with a little lemon white balsamic vinegar. Delicious!
