Breakfast this morning was granola, banana, milk, and decaf coffee with milk.
Lunch was half a leftover Veggie Quesadillas with avocado, creme fraiche and salsa. This was delicious last night for dinner and again today for lunch :) So much better with the homemade tortillas and adding black beans to the veggies for some added protein.
Snack today was a Banana Chocolate Muffin. Only have 1 of these left though :( I keep them in the fridge and I have grown to really like them, even with the 100% dark chocolate mistake.
Dinner tonight was Roasted Chicken and Roasted Veggies. I roasted the chicken with Tuscan Herb Olive Oil from O'Leva, savory, salt & pepper. For the veggies, I roasted carrot, turnip, onion, and sweet potato with both garlic and regular olive oils, savory, salt & pepper. This is a meal we eat often and really enjoy. I also have leftover chicken now to try a new recipe tomorrow for dinner :)
