Day 9

Day 9 is done and we are still going strong. Had a busy day today as well. Had my first parent-teacher meeting and was doing a lot of last minute preschool preparations. Exciting times; going into business for myself, doing a job I love and look forward to :)

Breakfast today was the refrigerator oatmeal recipe I shared earlier. I tried the apple cinnamon flavor, it was ok but too much cinnamon for me. I will try some of the other flavors as well. It is a little odd to eat oatmeal cold but it is kind of pudding like. Hubby wasn't as fond. They are easy to make and nice to make it the day before and have breakfast ready to go as soon as you get up. Sorry, forgot to take a pic but the ones on the site looked much nicer. I didn't garnish mine so it just looked like a jar of mush.

Lunch was a leftover soft shell chicken taco from last night's dinner. Still great.

Snack was a banana muffin and a fruit salad. I admit I really do enjoy this fruit salad :)

Dinner was salsa chicken, brown rice and corn. (Salsa chicken is literally just chicken cooked with salsa). I made a point to use the mild salsa but it was still a little spicy. I also found it a little saltier than usual; it may be due to using the Herdez salsa which has added salt. I may make my own salsa next time and see if that's better. This is actually a picture of Hubby's dinner, I only had half a chicken breast (all I wanted) and thought his looked more picture-worthy than mine :)


As mentioned earlier, I was hosting a meeting tonight and was wondering what I was going to serve if anything. I had coffee and tea of course, even had white sugar if anyone wanted it. Didn't really have time to make anything and didn't really want to pick up something that I wouldn't be able to eat. I ended up getting a fruit tray. It did come with some cheese type dip but the fruit was fine. My dear sister brought along a box of chocolates :( I have to admit, I didn't have any and didn't overly crave them. I actually didn't eat anything at all, was too nervous and excited I guess. I am getting a little hungry now though. May get a snack but not sure what it will be, but it will be real food of course :)

Ok, so I just ate the left-over fruit from the fruit tray :)
