Breakfast: Made a delicious omelette using 3 eggs, bell pepper, prosciutto, and tomatoes. I cooked it in olive oil and seasoned with a little salt and pepper. It was so yummy!
Supper: Roasted Vegetables with leftover Almond-Flax Chicken I cooked yesterday. I really enjoy this chicken so I usually cook enough for a couple of meals. I divided my chicken breasts up as I often find a full one to much to eat with everything else.
