Tonight I made Cauliflower Tacos, made these before and they are good, especially since they have no meat at all. I cut the walnut amount in half just for less fat for Hubby but otherwise I followed the recipe. Also made Mexican Rice (1st time recipe) and it was good as well :) I used dried crushed red pepper in place of jalapeno and didn't use the cayenne at all. Also, didn't see the point of only adding 3 tbsp of corn. I like corn so added half a cup.

It has a good texture and taste as well. I bet most people wouldn't guess it wasn't meat especially when eaten in a taco :)
