Tried a Cauliflower Crust Pizza tonight for dinner and I have to say it has potential. I think the trick is squeezing all the moisture out of the cauliflower; think I could have squeezed out more. It was good but the "crust" was a little wet in the center. Will definitely try it again. Hubby loves pizza and I am coming to the conclusion that I have to stop eating gluten. This works :) We topped the pizza with spicy marinara sauce, tomato, mozzarella, Parmesan, prosciutto, and fresh basil from Lester's Farm.
