Tried another new recipe from my new Minimalist Baker cookbook: Burrito Bowls! They were great. My only complaint with this recipe and the cookbook in general is the prep times. This recipe was a 30 minute or less weeknight recipe; it took me 60 minutes. The only way I can see that happening is if they have all the ingredients prepped and ready to go. Sorry, 5 minute prep time to chop peppers, onions, tomatoes, fresh cilantro, etc and get everything ready to go in when needed; not happening. My rice and beans were done awhile before everything else was even ready. These burrito bowls had a lot of smaller recipes within; you made a rice recipe, a bean recipe, a veggie recipe, a corn salsa, and a guacamole. All were simple with only a handful of ingredients. I left my rice plain as I figured there was already enough going on with everything else. The corn salsa was great and will likely be making that again for other recipes. Salsa would be nice with this as well; we forgot until after we were finished.
