This meal was pretty good as well. I'm not sure where they get their serving sizes from as we find the suggested serving sizes seem to be off. This recipe says it makes 4 servings: I only used 1 of the 2 cans of black beans and we still managed to get 6 good-sized servings.
Tried my second free recipe from the Forks Meal Planner and we were not disappointed :) (First one was Cajun Cauliflower Bowl). Tonight we tried the Santa Fe Penne Recipe but I used rice instead of penne as we had pasta last night for supper and for leftovers as lunch again today. This meal was pretty good as well. Definitely plan to make this again; the only change I would make is to add a little chili powder and/or crushed red pepper. It seems like it needs a little kick of heat.
