Breakfast this morning was oatmeal made with some maple syrup, frozen raspberries and toasted coconut. I still haven't made a batch of granola; with this heat I don't like the idea of running the oven for almost 2 hours. It's hot enough.
Snack today was a tea latte from Second Cup. I met a friend for tea and I wanted to stay within my real food rules but still enjoy the afternoon with a friend. I had an earl grey tea latte because they are one of the few kinds that can be made without added sugar. It's just tea and milk. I added a little honey to it as well.
Dinner tonight was Stuffed Peppers. One of my favorite meals. I served mine with avocado and creme fraiche. The picture is of two but I only ate 1 and a half. They were small peppers so I thought I would eat both but they are still pretty filling. A reminder when making this recipe; it makes a lot of filling, you could stuff maybe another 2-3 peppers. I freeze the leftover stuffing and use it on tortillas.
