Sundays are Becoming Prep/Cook Days :)

This is our third Sunday in a row, prepping and cooking meals to have throughout the coming week. It makes for a very busy Sunday but it makes my week so much more enjoyable. There are suppers and lunches ready to go for a few weekdays so I don't have to spend most of the weekday evenings cooking. Hubby helps as well and does most of the chopping and prep work while I do the most of the cooking. I'm loving it!

​Today we made a new recipe from my new Forks Over Knives cookbook :) First time using this book. We made Spanish Chickpea Stew (This link has a few differences from the actual recipe in the book but pretty similar. I posted a pic of the recipe I followed). Tasted it when it was done and it's good. I made a few changes as usual, nothing drastic :). Used chili powder instead of cumin, and spinach instead of chard.

We also made Vegan Paella Primavera. We have made this dish before and enjoyed it, I love the addition of olives in it. I changed up some of the veggies for what we had on hand, and again didn't use the saffron. This time though we added some vegan sausage we picked up this weekend at Simply For Life. I've heard these are really good so was curious to try them. They taste really good and have a nice texture, even Hubby agreed. One of the best vegan sausage I have tried yet :)
Tonight's supper was pan-fried cod with roasted veggies.
We even cooked breakfast this morning :) We had homemade hash-browns with fried tomatoes, fruit, and a great gluten-free tea biscuit from Nourish.
As you can see from all the food and pics, we had a very busy day!
