Still doing the Green Smoothie Challenge :) I liked today's smoothie the best so far and it even had kale in it which I find has a pretty strong flavor. I will try this recipe again with spinach; think it will be a keeper. Today was the Mango Green-A-Colada (kale, coconut milk, mango, pineapple & water). I made it the night before (so Hubby has it for work) and I added some water to thin it a little. Give it a shake in the morning and it was really good. Yesterday morning we had the Coco-Cherry Berry Cooler and I wasn't very fond of that one. I also found that it was pretty solid the next morning so shake it well and definitely add a little water to thin it for drinking; especially if making the night before. Dinner tonight was a salad (spinach, tomato, green pepper, orange, toasted walnuts, avocado, basil olive oil, & orange balsamic vinegar) and Bruschetta Chicken. The chicken I have made before but it seems like it's lacking something. I forgot until I made it again. It's a good meal but not great. The chicken breasts were pretty big so I ended up with lots of leftovers. Will try freezing some of the chicken and see if it works in a taco or similar type of meal. Still grain and gluten free and feeling more like my old self again :)
