Serves 2-3 (If 2 they will be big servings)
Ingredients:4 slices of bacon (or 2 strips of pork belly brined as bacon)
1 1/2 tbsp butter, divided (or bacon grease)
1/2 small onion, diced
1/2 green pepper, diced
2 potatoes, cooked, cubed (I microwave them the night before, it's easier to chop them when cold)
1 roma tomato, chopped
4 eggs, beaten
1-2 tbsp milk
Sea salt & pepper
2-3 oz grated cheddar cheese
Directions:
Preheat oven 450 F.
Cook bacon to crispy and dice/crumble it; set aside.
Place 1/2 tbsp butter in a large oven-proof fry-pan over med heat. Melt butter then add diced onion and pepper. Fry about 5 minutes until veggies start to soften, stir occasionally so they don't burn. Next, add another 1/2 tbsp butter to pan and the potato cubes, cook another 5 minutes to heat and brown the potato, stir occasionally. Next, add tomatoes and the crumbled bacon; stir to combine.
Meanwhile, add the last 1/2 tbsp butter to a medium fry-pan over med-high heat, melt. Add milk, salt and pepper to the beaten eggs, stir. Add beaten eggs to the new fry-pan and scramble. When eggs are just cooked place them on top of the veggie and bacon mixture. Top with grated cheese and place in preheated oven. Turn oven to broil and heat until cheese is melted and browned, about 3-5 minutes (watch carefully so it doesn't burn). Serve.
