Serves 4
Ingredients:
Brown rice, cooked according to package directions (make 4 servings)
1 1/2 cups frozen green peas
1 tbsp olive oil
2 or 3 boneless, skinless chicken breasts, cut into bite-sized pieces
Onion powder
Garlic powder
Pepper
1 onion, chopped
2 eggs, slightly beaten
1 tbsp soy sauce, divided
Directions:
Cook rice according to package directions.
Cook peas according to package directions.
Add olive oil to large fry pan. Heat over med-high heat. Add chicken. Season chicken with onion powder, garlic powder and pepper (I don't use salt because I find it salty enough with the soy sauce). Cook until chicken is no longer pink. Add chopped onion. Cook until onion softens and chicken starts to brown.
Next, push chicken and onions to one side of the large pan and add the beaten eggs to the other side. Using a spatula of large spoon, stir the eggs to scramble them; once cooked combine scrambled eggs with chicken and onions in pan. Add 1/2 tbsp of soy sauce to chicken mixture. Add cooked peas and cooked rice. Stir together to combine. Add remaining 1/2 tbsp soy sauce and stir all together. Serve.
