Baked Cod & Onions

Serves 4-6 (I think 6, Hubby thinks 4)

Ingredients:

2 lbs cod fillet
2 onions, chopped
Sea salt & pepper to taste
1 tbsp savory
1 tbsp butter, chopped into pieces

Mango Salsa Ingredients:
1 small mango, diced (I used frozen pieces, about 1/2 - 3/4 of a cup)
1 small cucumber, diced
Green onion
Juice from 1/2 large lime

Directions:

Preheat oven to  400 degrees C. Place cod in 8x11 casserole dish. Add onions. Season with salt and pepper. Add savory and pieces of butter over top. Bake fish about 20 minutes until fish flakes with a fork.

Meanwhile make salsa: Stir together mango, cucumber and green onion. Squeeze lime juice over top. Stir and let sit until fish is ready. Spoon over fish when serving.
