Ingredients:
12-14 large raw shrimp (31-40 count), cleaned and deveined
1 large garlic clove, minced
1 tbsp coconut oil, melted
1/4 - 1/2 cup shredded, unsweetened coconut
Directions:
Preheat oven 400 F. Line a small baking sheet with tinfoil and grease with a little coconut oil.
Place shrimp in medium bowl, pat dry if needed. Add garlic and oil. Toss so all shrimp are coated with oil. Place shredded coconut on a plate or pan and bread shrimp on both sides. Place breaded shrimp on the prepared baking sheet. I top each shrimp with more coconut if there is more remaining on the plate. Bake 400 F for about 8-10 minutes or until shrimp are pink and cooked through. Then broil for 2-3 minutes to brown the coconut.
