Tuna Melts (without mayo)

I have not eaten any canned tuna in over 50 days because I am unable to find real food mayonnaise. All the store bought stuff has added sugar, added bad oils, and/or food additives. I tried making mayo at home but used olive oil and found the texture perfect but the taste way too over-powering. I miss eating tuna sandwiches, tuna salad, and tuna melts; therefore I tried a tuna melt today with yogurt instead of mayo. It was really good even if it was a little yogurty :)

Serves 2

Ingredients:
1 can tuna, drained and flaked
1/4 cup plain yogurt
1 celery stalk, diced
1 or 2 green onions, finely sliced
Juice from half a lemon
Salt & Pepper, to taste
2 slices whole grain bread
1 oz mozzarella cheese, grated

Directions:

In a medium bowl add drained, flaked tuna. Mash it with a fork if needed. Add yogurt, celery, green onion, lemon juice, salt and pepper. Mix all together. Place tuna mixture on top of 2 slices of bread. Top each with grated cheese. Place in toaster oven on toast setting for about 5-10 minutes until heated through and cheese is melted and browned. Watch it carefully because once it starts to brown it can burn quickly. Serve and enjoy.
