Serves 4-5
Ingredients:
8 oz dry whole wheat pasta (I use penne)
2 tbsp olive oil, divided
2-3 garlic cloves, minced
1 pk (pint) of grape tomatoes, halved
1 tsp basil
Sea salt & pepper, to taste
1 bunch broccoli, chopped into florets
Parmesan cheese, grated (optional)
Directions:
Cook pasta according to package directions.
While pasta is cooking add 1 tbsp of olive oil to a large fry pan over med heat. Add minced garlic. Add the halved tomatoes, turned cut-side down. Add basil, salt and pepper. Fry tomatoes about 5 minutes, toss and remove from heat.
Add broccoli to the pasta for the last couple of minutes of cook time (I often add broccoli, then close the lid and turn my pasta up to high to quickly bring it back to boiling. Watch it closely so it doesn't boil over).
Strain pasta and broccoli when done. Return to pot. Add the remaining 1 tbsp olive oil and the sautéed tomatoes. Stir together to coat everything with oil. Top with grated parmesan if using and enjoy.
