I have had green smoothies for breakfasts along with ground meat fried up with veggies and olive oil. Sometimes with eggs, sometimes not. Having leftovers for lunch. Cooked lots of chicken and veggies Sunday evening for leftovers and tonight made a pork and veggie stir-fry. For snacks I have been having leftover roasted veggies with olive oil, some fruit, or a banana mashed up with coconut and coconut manna. Tried this one for the first time last night and it was pretty good but it is mashed banana so odd consistency for snacking in my opinion.
Taking it one day at a time and so far so good. Went back on AIP yesterday and have had 2 great days so far :) Still having cravings and eating a lot as I'm often pretty hungry, but sticking with it. It really helps to have some meals prepped and/or cooked in the fridge and freezer. Makes things so much easier. So, I took the entire weekend off from healthy eating and went a little nuts....ok, a lot nuts. Ate loads of restaurant food and junk food. Ate whatever I wanted, whenever I wanted, and didn't track a thing. It was a little freeing not to record everything I ate and how I was feeling but I will admit I feel pretty horrible now. I ache all over, feel like I'm getting sick, am very tired, and just feel really crappy overall.
Planning to start the AIP plan again tomorrow, but this time I will try harder. I used today as a prep day and cooked lots of food to have for breakfast and lunch for the next couple of days and lots of meals in the freezer for when needed. That's my worst problem I think, not having food available and ready when I get hungry. It then becomes easier to grab something that I shouldn't eat because it's too much trouble to make something healthy. Hubby chopped up a pile of veggies for me today :) Yay! I fried up ground pork in garlic olive oil with zucchini and added steamed sweet potato and carrots. I love this as a breakfast meal, with or without eggs. I have a bowl in the firdge and the rest in containers in the freezer. I also fried up ground beef the same way and have that in the fridge and freezer as well. Tonight, for dinner, I roasted chicken breasts with lots of veggies (carrot, turnip, butternut squash, and beet). Thanks again Hun for the peeling and chopping :) Had the chicken and veggies for dinner and lots of leftovers as well :) Also made green smoothies for tomorrow morning and have lots of fruit bought as well :) I am still struggling to stick to any healthy plans lately. I am having major cravings and no motivation or will power. I have one or two good days and then start eating unhealthy choices again. No idea why I'm having so much trouble now. I know I feel better when I follow a plan and eat better, but can't seem to stay on track. Did have some healthy meals throughout the week but also ate some dairy and gluten items along with some junk food, sigh. Think I will take a break from following a plan, writing everything down, and worrying about what I'm eating for a couple of days. Hopefully I can reset and start again fresh on Monday :)
Still doing pretty good. Just starting week 2 of AIP but haven't been 100% everyday. Still struggling but not doing too badly. Had a few splurges over the weekend but still motivated to keep trying and I am feeling better.
Today was pretty good. Really enjoying the green smoothies for breakfast. I have started adding half an avocado to the mix, yummy. Dinner tonight was a pork stir-fry. Very simple but good. I sliced up some boneless pork chops and added a bag of frozen veggies. Fried everything in garlic olive oil and added some coconut aminos (similar to soy sauce). |
