Serves 4
8 ounces Penne pasta, cooked according to package directions
1 tbsp olive oil
2-3 boneless, skinless chicken breasts, cubed
Salt & Pepper
2 tbsp butter
2 garlic cloves, minced
1 1/2 cups heavy cream
1/4 cup Parmesan cheese, shredded, (plus more for garnish)
1-3 tsp Cajun seasoning, depending on how spicy you like
2 Roma tomatoes, diced
4 green onions, chopped
Cook pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over med-high heat. Add the chicken and season with salt and pepper, cook until browned and cooked through.
Remove the chicken to a plate and cover to keep warm.
Add butter and garlic to pan and sauté for about a minute. Make sure it doesn't brown or burn. Add heavy cream and bring to a light simmer. Add the Parmesan cheese and mix well. Add the Cajun seasoning. Simmer until thickened, about 5 minutes.
Toss the pasta into the sauce mixture and stir well to coat. Add cooked chicken, tomatoes, and green onions. Toss to coat everything. Serve topped with grated Parmesan.
Notes: Sept 2015: Double the tomatoes, add spinach (about 1 cup) to the cream when simmering, use 3 tsp Cajun seasoning. Maybe use some extra cream for more sauce.
