My take on Gazpacho recipe from "You on a Diet" 2006.
Serves 4
Ingredients:
2 lbs fresh tomatoes, chopped (can use 28 oz canned diced)
1 cup tomato juice
1 bell pepper, diced
1 cucumber, diced
2 tbsp finely diced onion
2 green onions, chopped
1 bunch cilantro, diced
2 tbsp apple cider vinegar
2 garlic cloves, minced
Salt & pepper (optional)
Hot sauce (optional)
Avocado or fresh parsley for garnish
Directions:
Place all ingredients in large bowl, except for garnish, salt & pepper, and hot sauce. Mix all together. Use hand blended and blend about half of mixture, or until desired consistency. Season with salt and pepper if desired (I didn't). Use hot sauce if you like it spicy (I don't). Refrigerate if you want to serve chilled. I like it when just made at room temperature, served with a nice bread :) Add garnish when serving.
