Made a meal plan for this week that was mainly plant-based and almost 100% oil free. Some meals will not be made again but others are keepers :)
Tonight I had Loaded Sweet Potatoes from my "Oh She Glows" cookbook. I think I made these before and wasn't overly happy with it, but I loved this recipe tonight. Tastes change over time I guess and I did make the avocado crema this time (last time I think I used plain avocado) and I added a cup of corn to the bean mix. Very good and hearty. A keeper for sure!
