Having a great day! Tried a new recipe tonight for dinner and it was delicious. Made One Skillet Paleo Mediterranean Chicken. It was great as is, we only added a little Parmesan cheese at the end; but would have been great without it. Also think it would be wonderful served over pasta. This one is definitely a keeper :)
The rest of my day has been good as well. Had a coffee this morning along with local ground beef fried with veggies (zucchini and carrots) and topped with oil and local eggs. Find that to be a pretty filling meal so only had a banana and nut butter for lunch/snack. Still feeling a little better overall health-wise and attitude-wise so will continue to try and stick with gluten-free for now.
