I still struggle with what to eat and want to be more healthy without getting caught up in only weight loss. Yes, it would be nice to lose some weight but overall I really just want to feel better.
I recently started reading "How Not to Die" and have been playing around with the idea of eating plant-based and oil-free for the last couple of years but it's difficult. I tend to get a couple of good days eating-wise and then it becomes too much work or I get cravings or I have a couple of not great meals and I lose my momentum again. So I am going to give it another try but using baby steps. I tend to be an all or nothing person so once I veer off course I simply give up. This time I'm just trying to eat more plant-based, oil-free, healthy meals. I can still eat anything I like so no "all or nothing" mentality, just an increase in healthy foods for now :)
Tonight we had Costco spring rolls and I made a veggie rice. Used brown rice, red onion, red pepper, eggplant, zucchini and a spice mix from the How Not to Die book. I topped my rice with some sesame seeds and pumpkin seeds. It was pretty good :)
