Snack today was a Larabar and some dried figs while we were out running errands.
Lunch was just a couple of boiled eggs and a small glass of milk.
I have also been snacking on some homemade coconut chocolate throughout the day as well.
Still doing well food-wise. Breakfast this morning was an english muffin with cream cheese and strawberry jam, along with my morning coffee. I have also been snacking on some homemade coconut chocolate throughout the day as well. Dinner tonight is a new recipe: Marinated Tuna Steak, with brown rice and sauteed spinach (simply spinach, avocado oil, salt & pepper, toasted walnuts and garlic). It was really good. Hubby loves fresh tuna; I like it but not as much as him. Now I love canned tuna but Hubby can't even stomach the smell once the can is opened. We are trying to get more fish into out diet lately so we are branching out of our comfort zone.

Day 85 of our 100 day real food challenge. We both lost weight today, although I'm sure it is more due to stress :( Breakfast this morning was half a boiled egg (gave the other half to the dog we have recently inherited), a whole-wheat banana blueberry pancake (from the freezer) with maple syrup and some homemade hash browns; along with my morning coffee. Lunch was a cinnamon raisin english muffin with butter and a glass of milk.
Snack was a Larabar. Dinner tonight was Veggie Quesadillas. Quick and easy and still really good. Taking things day by day. Tried to keep the day as normal as possible. Went for groceries and ran errands. Breakfast this morning was a boiled egg and my morning coffee. Snack was a Larabar while we got groceries. Lunch was leftover fish tacos from last night and they were still great. Dinner tonight was not really planned. We bought some arctic char at the grocery store today so that became dinner. Hubby dredged the fish in flour, salt & pepper, and then pan-fried it in butter. We had a simple baked potato and green beans. Very nice; first time I ever had this fish and I liked it. It's a lot like trout, with a very subtle salmon flavor. I wasn't sure if I would blog today. Our family has received some very bad news; Hubby's Mom passed away this morning. Even though we are going through a very hard and emotional time right now, we still managed to stick to our 100 day real food challenge rules. I'm not sure if it will continue over the week, but we will try and see what happens. Breakfast this morning was a coffee. Snack was a Larabar. Lunch was leftover Stuffed Peppers from last night; thank goodness we had leftovers in the fridge ready to go. Dinner tonight was fish tacos. We used the same recipe we used before for Shrimp Tacos and just swapped out the shrimp for pan-fried tilapia. We also tossed the fish in some homemade taco seasoning instead of the cayenne, and added shredded carrot to the cabbage. They were really good. Another good day here. The storm last night wasn't as bad as first expected. The winds were the highest ever but the snow didn't amount to much, especially by the end of the day after all the rain and warmish temperatures :) Breakfast this morning was whole grain toast with butter and cheese, along with my morning coffee. Starting to feel much better now so will need to soon make a batch of granola. I'm missing it a lot for breakfast. Snack today was just some apple with the kids in preschool. Lunch today was leftover Beef & Broccoli Orange Stir-fry with quinoa from last night's dinner. Dinner tonight was Stuffed Peppers. They are really good. We made them once before and they were great. The only change tonight was I made them without the ground meat. The first time I made them I did use ground chicken but thought they really didn't need it. They have lots of great flavor and with black beans and cheese they really don't lack in protein. Both myself and Hubby enjoyed this version as well. I served mine with avocado, yum; and Hubby had salsa.
I thought this was spring. Second storm this week, sigh. Not suppose to be a nice night tonight at all; hope everyone is indoors, snuggled up and warm :) Breakfast this morning was the last wholegrain english muffin with cream cheese and strawberry jam, along with my morning coffee. Snack today was just some orange juice with the kids in preschool. Lunch was the left over pork, potato and peas from last night's dinner, and it was still excellent. Second snack today was a piece of fresh coconut. Dinner tonight was mostly cooked by Hubby which was great. I've been cooking, cleaning up, eating alone, and dog sitting the last few days and evenings while he's been working and spending time with his Mom in hospital. She is doing great, had surgery, and is now home. For dinner tonight we had the Beef and Broccoli Orange Stir-fry with quinoa. Great meal :) Starting to feel better and get into normal routines again. Can't believe it is day 80 already; only 20 to go :) People ask me what I will do after day 100. Well I know I will not be going back to the way I ate in the past. I was feeling way to ill and having too many stomach issues to do that to myself again. I may not be 100% as strict as I am now but I plan to follow the same rules from this real food challenge about 80% of the time. That's the plan as of now; moderation for the more unhealthy and processed foods. What I am not looking forward to in the realm of eating and following this challenge is that on day 101 we will be on vacation and it is going to be much more difficult to eat well. I am just hoping that I will not get really ill going from eating this way and then going on vacation. We plan to make good choices but the best choices may not always be available. Breakfast this morning was a wholegrain english muffin with cream cheese and strawberry jam, along with my morning coffee. Lunch today was a bowl of chicken soup with rice from last night's dinner. There's nothing better when you are feeling under the weather than chicken soup :) Snack today was a glass of milk and some fresh coconut. Dinner tonight was the Pork Chops with Apples and Onions that was on the plan for last night's dinner (but I will too ill and not in the mood to make because I wanted soup). I served it with peas and baked potato with butter. It was delicious. This recipe does call for beer/wine/cider or broth. I have made it with light beer both times and we both love it, but if you are not a beer fan I would recommend using something else. It does have a strong beer smell when cooking and the apples do take on the beer taste. It's really good :)
Another short post today. I have come down with the flu that everyone was getting a little while back :( It started yesterday and hit me hard last night, so fingers crossed it will soon be gone.
Breakfast this morning was the last of my granola (will need to make a new batch when I'm feeling better) with banana and milk; along with my morning coffee (decaf). Lunch was not much of anything. One thing about being sick I guess is my loss of appetite. I had the last few corn chips from the weekend, a large glass of orange juice, and a piece of fresh coconut. Dinner tonight was suppose to be a pork chop recipe but I really wanted soup, problem was I had to make it :( I made my regular chicken soup but with the rice instead of the noodles. This will be a short post. Today is a day where all the plans have gone out the window.

After breakfast myself and Hubby ended up having to bring his Mom to the hospital. He's been there with her all day and I have been back and forth and running errands. She will be fine but looks like surgery tomorrow. No lunch today. First snack was a Larabar. Second snack was another Larabar and a banana. Dinner was Quinoa Casserole from the freezer, and I made a sandwich and brought out to Hubby. Breakfast this morning was an egg in the hole (egg and whole wheat bread fried together in butter) and my morning coffee :) Snack today was a Larabar while we were out running errands and getting groceries. Lunch today was a whole grain english muffin, with cream cheese and strawberry jam. It was excellent. First time having an english muffin and cream cheese since we started the 100 day challenge. I finally found organic real food versions :) Yay! Second snack was an orange and some fresh coconut. I bought a whole coconut at the grocery store today and realized why I don't often buy fresh coconut. I don't think they are worth the effort it takes to into them and get them ready to eat.
Dinner tonight is leftover Cod Au Gratin on Dressing from the other night. I'm heading out tonight so I have guacamole and corn chips made so I have snack options while at my sisters for some wine :) |
