I keep them simple and just mix together my ground meats with some salt and whichever seasonings you like. Fried them in some garlic olive oil and had them with avocado and veggies. Hubby had his on a bun with tomato, spinach and mayo.
Made chicken/pork burgers for dinner tonight. They were really good but ate too much and now way too full. Should have stopped eating about 3/4 of the way through but didn't :( Need to work on this in the future I think :) I keep them simple and just mix together my ground meats with some salt and whichever seasonings you like. Looking at the picture it doesn't look like too much but I could have done with one burger and half the avocado or simply left the mixed veggie out altogether. I have this for lunch tomorrow as well; think I will only be eating half :)

Tried two great new recipes this weekend :) Grilled Cilantro-Lime Chicken with Avocado Salsa & 5 Ingredient Chewy Chocolate Coconut Cookies.
Had a friend over for dinner on Saturday and the chicken recipe was requested after seeing me pin it on Facebook. It was really good. I loved the flavors of this one. Will definitely make it again. Had the chicken with sweet potato fries, yummy :) I also made a new cookie recipe. I think these could be great but I used a different brand of coconut which I wasn't overly fond of. I will definitely try these again with my regular coconut next time :) For dinner tonight we tried Paleo Shepherd's Pie and it was really good :) I love Shepherd's Pie and rarely have it now as it usually has tomato sauce and potato; foods I'm trying to avoid for awhile due to inflammation. This recipe uses sweet potato for the topping instead of white potatoes.It did call for a little tomato paste but I simply left it out. It wasn't my typical pie but it was really nice and would be great when craving a casserole type of meal. Lately I mainly eat simple meat and veggies and it gets tiring. I will make it again but likely try another ground meat as I find ground chicken pretty bland; even with the seasonings.
We were lucky enough to get a great feed of trout from Dad for dinner tonight :) Yay! Fried it up in the cast iron pan and then finished it in the oven. I like my fish crispy and that is very hard to do without using any flour. This works but may try coconut or almond flour next time :) Also had local bok choy and baked sweet potato. Great meal.
Tried a new pork recipe last night and it was really good, even after I messed it up a little :) Saw a video of the recipe (Apple Cinnamon Pork Roast) on facebook this week and thought I have everything I need to make that. Didn't watch the entire video as I usually don't have the patience or focus to watch many video clips (yes, even if they are less than a minute). I prefer to read my recipes instead of watching them; yes I'm that old school. Anyways, went to make this for dinner last night and realized it was done in a slow cooker over 3-4 hours....Oops. In the oven it went. I also had a smaller pork tenderloin then the recipe called for so I added some sliced carrots to the pan so it wouldn't burn. Even so it was really tasty :) Will be making this again and will try the slow cooker as some of the cinnamon was still a little dry on top after coming out of the oven. To note, before anyone says well the recipe is called Slow Cooker Apple Cinnamon Pork, awwwww duh; this was not the first link/clip I saw. I found this second link afterwards because I like to have the Pinterest option to pin it for later. Even if later never comes for most of my pins :)
Still doing great and can't believe how much my legs and knees have improved over such a short time. Last weekend my knees were so bad I could barely climb stairs and they were aching constantly. My calves were so tight they were almost charley-horsing and I needed heating pads for several nights. Now, a week and a half later my legs don't hurt at all, just some slight muscle twitching and my knees haven't bothered me at all over the last several days. It just goes to show that what you eat can greatly affect how you feel. Dinner tonight ended up being fried ground pork (fried crispy) with carrots and zucchini, and topped with fried eggs. One of my favorite breakfast meals, but for dinner. Really wasn't in a cooking mood tonight and Hubby is working late. Needed to have something so I wouldn't end up ravenous and eating everything in sight :) This did the trick :) Had Roast Chicken & Veggies last night for dinner and trying to eat more fruit as well. Snacking on blackberries and clementines the last few days, really enjoying that :)
A great food day. I made smoothies and boiled eggs the night before to have some breakfast options ready for the mornings. This morning I had a great and delicious green smoothie with lots of healthy and inflammatory-fighting foods like ginger, pineapple, spinach, and apple. Lunch did not go as planned but was still good. I had leftover Tuna and Veggies in the fridge but wasn't really in the mood for tuna. Instead I had some blackberries and a couple of boiled eggs. Not much of a lunch but good and quick. My Mondays are a little busy and I don't have much time between Pre-K classes for lunch. Snacks were some apple and a couple of Sweet Potato Brownies. These are really good straight from the fridge :) Dinner tonight was a great bowl of Beef/Bison Soup. This was delicious and just what I wanted and needed after being sick for a few days. I already had homemade beef/bone broth in the freezer, so I just added some bison meat, carrots, turnip, green beans, and peas. Wonderful. Already looking forward to this for lunch tomorrow :)
The weekend is coming to an end and I must admit I did pretty well :) It wasn't perfect but I'll take it; as it could have been 95% worse. I was still nursing a head cold and not feeling the greatest on Saturday so I did splurge and get a latte from Second Cup along with some Coconut Logs from The Winter Market (The Old Dublin Bakery). The cookies were gluten free and homemade so, other than the sugar, they weren't too bad. The latte did have the crappy bottled sugar syrup but I only get half the sugar and I went with lactose free milk as they were out of almond milk. I try to avoid soy altogether and have been avoiding dairy, but can't do black coffee anymore. It wasn't perfect, as I said, but I am happy with it. It was a little splurge without going completely psycho. Had lots of great, healthy meals and snacks over the weekend. Dinner last night was grilled pork chop (marinated in mushroom & sage olive oil and red apple balsamic vinegar from O'Leva) with homemade sweet potato fries and fresh local bok choy (from Olivers Farm). Dinner tonight was seared tuna steak with mixed veggies. Also tried a new brownie recipe: Sweet Potato Brownies. They are so easy and only 4 ingredients. Just tasted part of one and they are pretty good but weren't chilled enough yet. Also, I didn't add the optional chocolate chips but think that would be better; I will add chopped organic dark chocolate next time.
Still doing really well food-wise and starting to feel better health-wise; well until I got a stupid head cold :( Still managing to eat well though and have to admit my knees and legs are not hurting at all today, and they were pretty bad this past weekend. Among the worst they have ever been, so something to it. Hubby was great and cooked dinner tonight, as usual for a Friday :) We had beef tenderloin (he had blue cheese on top), green beans, and I had baked sweet potato while he had roasted white potatoes. A great meal and I could even taste it; well mostly :) Now, fingers crossed I don't go off the deep-end this weekend and end up eating everything in sight. I will admit I am doing really well with cravings this week as well; not really having any to speak of, which is odd. Maybe something to this homeopathic approach as well :)
A regular meal here is Roast Chicken with veggies. The veggies vary depending on what I have and what I'm in the mood for. Tonight I roasted carrot and turnip with the chicken and also cooked up some green beans to have something green on my plate :) It was delicious.
