Dinner tonight was oven-roasted pork tenderloin with carrots and stir-fried mixed veggies. Very good. The pork and carrots were roasted with a mix of garlic olive oil and mushroom & sage olive oil. The mixed veggies were fried in butter olive oil. Everything was seasoned with a little sea salt and I topped my meal with lemon olive oil once cooked.
Two of my three meals today were pork. I fried up ground pork this morning and added sliced zucchini. This has become one of my favorite breakfast meals :) I often add leftover veggies if I have them available, if not, then zucchini or green beans as they cook more quickly. I fry up the pork so it's crispy, top it with flavored olive oil of course and sometimes I have it with eggs, as I did today. Yummy! I also had my green smoothie although a little different today due to the ingredients I had on hand. My second cucumber had gone bad so no cucumber today but I added an extra apple and half an avocado; very good. I will likely keep adding the avocado as I like my smoothies more thick and creamy :) Lunch was leftover cod and veggies from last night. Feeling much better today, finally :) Getting back on track with healthy eating. Not as tired today, very little joint pain, and no cravings. Yay! Finally feel like I'm heading in the right direction since falling off the wagon during Christmas. Started my day with a green smoothie. These are really good and Hubby is enjoying them as well. Also had some scrambled eggs and leftover veggies from last night's dinner as the smoothie isn't very filling on its own. Snack was some apple with the kids in pre-k. Lunch was leftover roasted chicken & veggies from last night. I tend to do leftovers for lunch whenever possible; so much easier.
Dinner tonight was oven-roasted cod fish with butter olive oil and lemon olive oil, salt, and savory. We also had pan-fried butternut squash with butter olive oil and salt along with green beans fried in garlic olive oil and salt. I buy tons of great flavored, high quality olive oils from O'Leva. I tend to put a little sea salt on most things when cooking as we are not eating any packaged food therefore we get little to no salt unless we add it. A great day! Started my morning with a great detox smoothie. I admit I was really missing smoothies and this one is pretty good. Fresh and sweet tasting with the apple and kiwi, but still healthy with ginger and spinach. I made this recipe last night so myself and Hubby had smoothies this morning for breakfast. I blend them up, put them in mason jars in the fridge and then just give them a shake in the morning. I didn't find it to be a filling smoothie as it has no fats or protein, therefore I also had my fried ground pork and zucchini with a couple of eggs. A great and filling breakfast. I should mention that I am making a couple of changes to the AIP plan, as suggested on the site. I know eggs are fine for me, as this was the only food I successfully reintroduced following the Digestive Health plan, so I am keeping them in. I also have suspected that onions are a problem for me so I will not be eating those for awhile yet even though they are included in the foods to eat list.
Lunch today was leftover chicken stir-fry from last night. Also drinking lots of water throughout the day, as normal for me. I'm taking some supplements: Thyrosense (for thyroid), super enzyme, probiotic, cod liver oil, and a turmeric anti-inflammatory as well. Dinner tonight was oven-roasted chicken breasts and veggies. I used carrots, turnip and green beans. Everything was roasted in a mix of regular olive oil and garlic olive oil, and topped with some sea salt and savory. Very easy and very tasty. I topped my chicken and veggies with lemon olive oil once cooked and added some homemade bacon to the veggies :) Everything is better with bacon :) Had a good day. Started following the guidelines for the AIP plan I mentioned earlier. So far so good :) I am actually very excited to get to have more veggies and now fruit, Yay! As I said before I get very excited over the little things :) Dinner tonight was a simple chicken stir-fry with chicken breast, frozen veggies (broccoli, carrot, and cauliflower), sea salt & savory, and 2 olive oils (garlic and butter flavored). I topped it all with extra lemon olive oil after cooking. It was great. So nice to have a healthy, easy meal with some different veggies :) Not feeling great today; tired and achy, but haven't been feeling too good for the last month since falling off the wagon. It will take a little time of getting back to a good routine and I will start feeling better again :) Already looking forward to a green smoothie tomorrow morning :)
I have been struggling since Christmas to get back on track and back to following an elimination diet for health reasons. I was following Digestive Health with Real Food for about 3 months and then Christmas hit. This is a really restrictive plan, but it was helping me greatly. I was still having problems though, which leads me to believe I have other stomach issues going on and am still awaiting a GI appointment (March). Hopefully this will give me some answers.
In the meantime I have decided to change things up a little bit in hopes I will feel better again and more easily get back on track. I am starting an AIP plan today. It's pretty similar to the elimination plan I was on except you get a few more vegetables and you get fruit :) Yay! It was so exciting to go to the grocery store yesterday and be able to buy some different veggies and finally some fruit. Yes, I get very excited over food :) There are lots of different plans out there but this is the one I am trying now: Autoimmune Paleo. This is very similar to what I was following and this type of plan is also recommended by the author of the plan I was following before Christmas :) Planning to give this smoothie a try tomorrow. Oh smoothies, how I have missed thee :) Decided to give a new restaurant a try tonight. St. John's Fish Exchange opened up this past Monday and we were looking forward to trying it. For those who follow my blog, I was doing pretty good most of this week, getting back on track but took the weekend off from dieting....again. Plan to get back to it 100% on Monday, because Monday is the only day you can start eating better. Nobody starts eating better on a weekend, pfffft. Back to the restaurant :) We had a great experience! The restaurant is beautiful and we sat upstairs right next to the windows; great view. Service was extraordinary and the food was fantastic. I had a Jam Jam Martini to start, very nice. Myself and Hubby tried three of the apps. I had the Shrimp, which were delicious, would get them again for sure. Hubby had the Cod Fritters, they were excellent as well; and we split an order of Calamari, these were fabulous as well and not overcooked. For mains, I threw all dieting out the window and had the Lobster Mac & Cheese....it was worth it. Hubby had a special; a full perch, yes the full fish with veggies and rice. We even tried dessert. A chocolate flour-less cake, to split :) I didn't get any pictures of the restaurant itself, so here's one from their page.
Dinner tonight was roasted chicken breasts and veggies. Such an easy meal but still great. I cook it all together in one casserole dish (actually I make 2 for leftovers). I add the veggies I am eating on my elimination diet (even though I haven't been 100% for awhile) but you can use any veggies you like. I place chicken breasts in the same dish. Cover everything with a generous amount of olive oil. I often used flavored from O'Leva. Tonight was a mix of garlic & lemon olive oils :) I season simply with sea salt and savory. Once all is cooked I again top my meal with lemon olive oil :)
I really enjoy my veggies roasted in the oven and do it often. I have been eating the same four veggies (mostly) for several weeks now and this is still my favorite way to have them. I find roasting, steaming, frying, boiling, etc... all make the same veggies taste a little different. It has been so hard for me to get back on track since the holidays. I understand that all the bad eating has brought all my cravings back with a vengeance but didn't think I would have this much trouble :(
I am still trying. Have some good days and then some bad but not giving up. Need to get back on track. Tend to do better during the week, although still not great; and then lose all control over the weekends. Planning and cooking need to be a top priority again. I did make a big pot of Chicken Soup last night and Hubby cooked tuna steaks and green beans for dinner tonight :) Good and satisfying food but all I want is to eat in restaurants, and indulge in chips and chocolate. Need to stay away from all that and after a few days it will get easier again. I've done it before so I can do it again :) I will admit I am having trouble getting back to my routine. Christmas really got me off track and the more junk you eat the more you crave it :(
I did great the beginning of the week. I planned and cooked my meals starting Monday and lasted until Thursday. The weekend I went off the deep-end again and I am paying for it. Spent my weekend indulging in chocolate, cookies, chips, Chinese food, and Starbucks. Not good. Had Chinese food yesterday (Sunday) for lunch and could barely climb stairs last night my knees hurt so bad. I know my knees are bad when I eat badly but sometimes it still doesn't stop me :( Need to get back at it but I understand it is really difficult to eat well in an environment where junk food and unhealthy foods are everywhere :( I am back on the wagon as of Monday. Christmas eating nearly killed me. Well not really I guess, but it made me feel pretty horrible.
I am back on Digestive Health with Real Food. Back to eating meats, fish, eggs, 4 vegetables and healthy oils. It will take some time to get back on track but already starting to feel a little better. Last night's dinner was roasted chicken breast and veggies. Tonight's dinner was roasted pork loins and veggies. Everything was roasted in olive oil and then topped with more olive oil after cooking :) Delicious. |
