Breakfast: Leftover Turkey Skillet and Roasted Veggies.
Lunch: Black Bean, Corn, and Red Pepper Salad with Rice, leftovers from the freezer. The black bean salad was served cold on lettuce originally but I tried it warm on rice today as I had to defrost it. It wasn't great hot, I didn't eat it all. I'd rather it cold as a salad.
Supper: Garbanzo Stir-Fry. We have had this before and liked it. Didn't make it exact tonight as my mushrooms were on the way out so had to improvise. Used some asparagus and a red pepper instead. Still good. This recipe doesn't call for any salt but I highly recommend using some as the recipe tastes too bland without. You don't need much.
