Dinner tonight was Ribs and Garlic Mash. Had my parents up for dinner. The ribs were in a dry spice rub overnight, then slow cooked in the oven, and finished on the grill with Screech BBQ Sauce. They were great and completely fall off the bone :)
Went to The Keg today for lunch. They are now opened in the new location; next door in the old Legros & Motti location. The service was great and we were the first customers :) Myself and Mom went to use up some gift-cards we had kicking around :) I remained grain-free by having a shrimp cocktail to start (shared) and the lobster and shrimp salad. The salad was huge for a lunch salad. Mom had the salmon with asparagus and sweet potato fries; she said it was excellent. So, it seems I won a free brunch from Saltwater from liking and sharing a post of theirs last month :) Myself and Hubby went today to give it a try. We are already fans of Saltwater but hadn't tried the brunch menu; until today. It was fabulous. The menu may seem a little different for some but the food was delicious. I also wanted to remain grain-free so I knew I would be avoiding any toutons; yes, many of their menu items come with toutons instead of regular bread. I also asked to be sure what I was ordering wasn't made with any flours and such. The staff was very friendly and helpful :) I ended up ordering a lobster omelet special...OMG! This was unbelievable. Hubby went with the Saltwater Breakfast, which he really enjoyed as well :) I would highly recommend giving their brunch a try. I was very pleased with the food quality and flavors. We had coffee with our meals and my coffee was even free with my brunch; bonus :)
It's Friday! Hubby came home and grilled steaks and reheated the Squash and Asparagus from last night. A great meal and still grain-free :)
Still doing very well with going grain-free. We shall see how it holds up over the weekend :)
Dinner tonight was fried fish, Roasted Asparagus, and Butternut Squash with Brown Butter. A great, and naturally grain-free, meal. The squash recipe is excellent :) Today was a great day. Not starving, as I have been a lot lately (even before grain-free), and no cravings. Having Paleo Granola available in the morning for breakfast is a great help. Lunch today was left over Jambalaya from last night and it was much better today. I added extra diced tomatoes to it and mixed the riced cauliflower into and served it all together. It was nicer that way.
Dinner tonight was a Beef Stir-fry; lots of veggies and no grains. It was good. The great thing about stir-fry is you can use whichever veggies you like. I followed most of the recipe but swapped out the green beans for bok choy. Myself and Hubby really enjoy Jambalaya and have this recipe we use often that we really enjoy. Today I decided to try Jambalaya but without any rice so I could have a grain-free version. I decided to try cauliflower as a rice substitute. Cauliflower is not a favorite of either myself or Hubby, but I was willing to try it. I was very surprised. It isn't rice and doesn't taste like rice but it worked. It seems more like couscous to me; perhaps I processed it too much. I made the recipe pretty much as written except for omitting the rice and chicken broth. I also added local Chorizo sausage sold from Rocket. I kept the cauliflower separate and served the jambalaya on top. It was good, not the same, but good. Hubby thought it was a little dry so next time I made add more diced tomatoes or a little broth.
I will likely use the cauliflower again in other recipes as a grain substitute. Trying the grain-free idea yet again. I have been to a homeopath recently and it is helping. I have tons more energy, feel better overall, and much less joint pain. However I am still stuck weight wise. I have been reading the Wheat Belly posts lately and so many people are having huge benefits going grain-free. Not just with weight loss but with tons oh health and well-being aspects. So here I go again :) Completely grain-free at home; wheat and gluten free if out. Did great today. Made an omelet and bacon this morning for breakfast. Only ate half as I shared the other half with Dad :) The omelet had onion, green pepper, tomato, and cheese. Lunch today was the last bowl of Chicken Soup from the freezer. Really need to stock up on freezer meals. Planning to do that this week with grain-free options :) Made a batch of Paleo Granola today to have in the mornings as my regular Granola has oats. Then had a bowl with milk as an afternoon snack. Needed to check to make sure it turned out fine, right? I added extra nuts, coconut, and pumpkin seeds and a little less maple syrup as I find this recipe pretty sweet when made as is. Dinner tonight was a pot of Chili. This is great because it's a favorite meal here and it's already grain-free :) I made it in the slow cooker because it's so much easier, and now we have lots of leftovers for the freezer. I added some grated cheddar and avocado to mine :) Yummy.
Had my parents up today for dinner :) Wasn't really planned but turned out great. Had prosciutto wrapped honeydew melon (sorry, no pic) for a starter. Then had bison burgers and Stuffed Sweet Potatoes; these are soooo good and pretty easy. I microwave the sweet potatoes so it's much quicker. We also used local cheese, Five Brother's Monterrey Jack; yummy. The burgers had cheese, spinach, bacon, and tomato. Hubby and Dad had whole wheat buns but myself and Mom went bun-less :) Dad also had Screech BBQ Sauce and I had avocado :) Delicious!
Saw the brunch options at Savvy for today and my mind was made up :) Today they had Eggs Benedict on Fish Cakes. I am loving eggs benedict lately but on these fish cakes it is pure heaven. So good. Hubby had the Creme Brulee French Toast; doesn't that sound heavenly as well? I tried it and it was really good :) Great brunch today, and a good-sized portion; I'm good now until dinnertime :)
Went out to a great dinner club last night. Friends of ours did Italian night. The appetizer was homemade bruschetta and homemade pesto with baguettes. It was delicious. The main was Cannelloni (made using lasagna noodles) with ricotta and sausage along with a side salad with homemade vinaigrette. This was so good :) Cheese, meat and pasta; how can you go wrong? Dessert was homemade tiramisu with whipped cream. Delicious :) There was also a great selection of beers and wine. Great night all around :)
