Still Trying More Veggies!

I'm still trying to eat more veggies with my meals; mainly with supper. Doing pretty well so far. This week I made Sweet Potato Skillet with salad, Chili (sorry no pic), Pork Chops w/ Apples & Onions along with baked potato and stir-fried veggies, Grilled Chicken with grilled sweet potatoes and stir-fried veggies.

A Lovely Lunch at Chafe's!

Finally, a lovely summer day here in good old Newfoundland :) It's a tad bit windy (enough to blow da head off ya, lol) but sunny and warm; I'll take it!

Myself and Mom went to Chafe's Landing for an early lunch today and it was delicious! If you've never been you have to go!
The food is excellent!
The fish and chips is to die for!
The renovated building is lovely!
​The service is great!

I always get the fish & chips once I'm there but they have a lovely big menu with such great sounding items I always want to try something else but I can't fit it all in ;) Today, we decided to ordered a few items and split them up. It worked perfectly. Still got my Fish and Chips (with a side of gravy), along with an order of Calamari and an order of Lobster Sliders.
The food was great! The fish is wonderful with a very light and crispy batter. The Calamari was great as well; not overcooked but still tasty and crispy. The Calamari is also done with banana peppers peppered throughout. Finally the Lobster Sliders were a great addition as well! They came in 3 flavors; the BLT slider was my favorite but if you add bacon to anything it tends to be a fav for me ;) the other two were Lobster Roll and a Cilantro with Lime; I found these both tasted the same. So not sure if we got two Lobster Roll ones or the cilantro and lime is way too mild. Either way everything tasted great, and love the fact that they use real chunks of lobster for the sliders :) Yummy! Yummy!

Nope, I'm Not Trying to Lose Weight.
I have given up the negative diet mentality along with all the different weight-loss diets (almost 2 years now) but it isn't always easy and I still struggle. I feel like sometimes I crave diet journaling and calorie counting, and even food restriction; even though I despise it all, and no it didn't work for me in the past and actually made things worse in the long run. I think it's the sense of order and control I crave, or the feeling like I'm doing something regarding my weight and health.
Right now I just want to focus on my happiness and health; not my weight.

Trying to Eat More Veggies!

So, overall, I think we tend to eat pretty good. Even though we eat pretty well I don't think we are eating nearly enough veggies. This week I tried to incorporate more veggies in our suppers. This means a little more planning for meals and groceries. It means more chopping and prep, sigh. It also means, really trying, so you don't end up throwing away all the fresh veg at the end of the week that you forgot to use. I think we did pretty well :)
​I made a vegan Cajun Cauliflower Bowl that I made before. It is pretty good. I use quinoa but it would be great with rice as well.

I also did a baked chicken breast (sorry, no recipe). I simply baked chicken with a mix of fresh herbs (basil, parsley, mint), diced onion, dried oregano, salt & pepper, olive oil, & lime juice. I made double this recipe so we could have it for two nights :) Made it one night with a salad and Baked Zucchini Tomato Gratin. Re-heated the chicken a second night and had it with Roasted Asparagus, corn on the cob, and a salad. All yummy!

Early Father's Day Dinner :)

Had the folks up for dinner tonight. Had some lobsters to start and actually got a picture before they were all eaten :) Then we had a BBQ. Had grilled tenderloins, corn on the cob, asparagus, and potatoes and onions done in foil packets. Everything was cooked on the grill! Delicious :)

Cooked This Week, 3x :)

Back from a mini vacation and starting my summer vacation. Started out good in the kitchen so far. Three home-cooked meals by me this week :)

​I made my Mediterranean pasta (without the shrimp) this week. A favorite as always. If you love the flavors of olive, artichoke, and tomato; this may be a recipe for you :)

I also made Curry Noodles. I'm still perfecting this to get it more like restaurant noodles. I used yellow pepper, red onion, and mushrooms for the veggies. Cooked everything in olive oil and curry powder. Cooked rice noodles and added to the dish with more oil and curry. It's good but not the same yet.

Tonight we were lucky to get some fresh trout (caught today) from my Dad :) Had pan-fried trout with mixed veggies (frozen to keep it easy) and a salad (packaged, again going for easy). Great and super easy meal; just need the delicious local fresh trout :)

Some Montreal Eats!

We spent a long weekend in Montreal for Formula One this weekend. Such a beautiful place; we will definitely be back. Had some great food as well :)

We tried an Asian noodle house, Nudo, that was minutes from our hotel. It was so good that we ate there twice :)
Being in Montreal I had to have some poutine and glad I did as it was excellent :) Hubby had a salmon dish, even on holidays he continues to eat super healthy. We ate outside on the deck at The Brass Door on Crescent Street. Very busy night/weekend but the service and food were great.
Also found a great chocolate shop across the street, Divine Chocolatier. Their chocolate is fantastic :)

Oliver's Brunch!

A great brunch at Oliver's as always :) I had my Beef Tip Skillet (with cheese this time). It was excellent. This is such a good meal; I crave it often. Tender chunks of beef with peppers, onions and hash-browns all cooked with a delicious gravy and topped with a fried egg. Hubby had the Fish Cake Breakfast (no hash-browns). Service was fantastic as well!
