So, overall, I think we tend to eat pretty good. Even though we eat pretty well I don't think we are eating nearly enough veggies. This week I tried to incorporate more veggies in our suppers. This means a little more planning for meals and groceries. It means more chopping and prep, sigh. It also means, really trying, so you don't end up throwing away all the fresh veg at the end of the week that you forgot to use. I also did a baked chicken breast (sorry, no recipe). I simply baked chicken with a mix of fresh herbs (basil, parsley, mint), diced onion, dried oregano, salt & pepper, olive oil, & lime juice. I made double this recipe so we could have it for two nights :) Made it one night with a salad and Baked Zucchini Tomato Gratin. Re-heated the chicken a second night and had it with Roasted Asparagus, corn on the cob, and a salad. All yummy!
