Both myself and Hubby are missing pub type food with a beer so we are going to try nachos from scratch, right down to making the corn chips made from tortillas. Now Hubby is working late tonight so we will be having a later dinner than usual. I figure nachos will not be great made and left to eat later. So, while I wait, I had some of the leftover stuffing from the stuffed peppers from last night, instead of freezing it. I heated it up with a little cheese and had it as an appetizer :) Excellent (The picture is a small side plate).For the nachos, I fried up extra ground chicken with taco seasoning and onions when I was cooking the stuffing for the stuffed peppers last night. I plan to use that on my nachos tonight. I am making corn chips from all natural corn tortillas and baking in the oven with a little avocado oil and salt. Then simply layer corn chips, re-heated ground meat, diced veggies (onion, green pepper, tomato) and a mix of shredded mozzarella and cheddar; repeat layers. Bake in oven until heated through and cheese is melted and golden. Serve with salsa, avocado, and beer :)

Still going strong on day 54 of our 100 day real food challenge. Breakfast this morning was granola, blueberries, milk, and a morning coffee (decaf). Lunch today was leftover tuna salad so I made another tuna melt on whole wheat bread with a little grated mozzarella. Dinner tonight was a new recipe: Stuffed Peppers. These were really good, both myself and Hubby enjoyed them. I pretty much followed the recipe as written. I used 3 red peppers but I would recommend using the 4 because we have a lot of filling left over. I will likely freeze it and make a small batch of 1 or 2 stuffed peppers another time. I made my own taco seasoning and added it to the ground chicken and onion with some water and cooked it all together. (Made the taco seasoning with a few changes; I omit the cumin, doubled the onion powder, and just added salt & pepper without measuring). Hubby topped his with some salsa and I used a little avocado. They were great. We started off with 1 stuffed pepper each and then shared another one, so now we have the same for lunch tomorrow. They are pretty filling. Would have been great served with a nice side salad but since I didn't plan that I didn't have anything here to make one :(
Thanks Shauna for sharing this recipe. It's a keeper, will definitely be making again :) Last night I opened a bag of dried figs I bought this weekend at Costco. Never had a fig before but I was interested in trying them. They were really good; very rich and sweet though so you wouldn't eat of lot of them at once. Nice for a different snack, maybe good on a cheese plate :) and best thing is the only ingredients on the bag is figs. The brand name is Made in Nature and they are organic as well. Breakfast today was granola, blueberries, milk, and my morning coffee (deaf). Snack today was with the kiddies in preschool. I had some pear. Lunch today was a choice between two different meals. I had leftover shrimp & pasta from last night's dinner and left over tuna salad from yesterdays tuna melt lunch. I ate the shrimp :) I plan to have the tuna tomorrow for lunch :) For dessert I ate my last chocolate muffin with a little whipped cream, it was delicious. Dinner tonight was roasted chicken, mashed potatoes and green beans (I roasted 2 chickens so we'd have leftover meat and I can make chicken stock). For the chicken I simply stuffed them with a quartered onion and a couple of pieces of lemon. Then just season with salt, pepper, and savory. The potatoes are the packaged ones from Costco, ingredient list is dehydrated potatoes, butter and salt. Sometimes it is nice to have something quick and easy and they are real food in my opinion. Yes, they are processed but have a short real food ingredient list with no additives or chemicals. I added some chives on top and the beans were simply steamed.
Day 52 of our 100 day real food challenge is going well. This morning I had my homemade granola with blueberries and milk; along with a decaf coffee (with maple syrup and cream, as per usual). I had forgotten I had bought blueberries this weekend and was a little disappointed when I had banana with my granola yesterday morning before realizing I had blueberries. Had them today and they were really nice :) They were not local seeing the time of year and all but they were good quality. Lunch today was my attempt at a tuna melt. I enjoy eating canned tuna and would often have it in a sandwich or as tuna salad or a tuna melt, but mayo is not an easy food to buy with all real ingredients. I haven't found one yet. Most of the store-bought mayo have added sugar or use canola oil (which we are not eating in our 100 days), or other additives. I did attempt to make mayo early on in our challenge. I made it with all extra virgin olive oil and the olive taste was just too over-powering. I may try it again, maybe with avocado oil next time. Today I made my tuna melt with plain yogurt and it was pretty good. Not exactly the same but creamy and still tasty. I will be having it again, like tomorrow for lunch because I made enough tuna mixture for 2 servings and only ate one :) I also had dessert after lunch. Those leftover cupcakes and whipped cream from last night's movie night were calling my name :) I find it interesting that many people feel they need to tell me that a lot of what I am eating is not healthy. They tell me that nuts, peanut butter, eggs, granola, meat, butter, oil, and whole dairy are all really bad for me. Some people tell me not to eat bread, potatoes, and fruit. Well we have been following the real food challenge for over 50 days now and myself and Hubby have lost more than 8 pounds each. Now I'm saying go out and load up on full fat milk and cheese and eat meat with every meal. Everything in moderation is still the key, but we have eliminated a lot of sugar from our diet over these past 50+ days. The only sugar we eat now is from honey, maple syrup, or fruit. No foods with any added sugar and no white sugar or other refined sugars; and it's making a difference.

No real snacks today except for a couple of tastings of chocolate as I made it. Dinner tonight was chili from the freezer. No cooking today. Hubby has to work late so I figured we could do freezer meals, that's what they are there for :) I do have some girlfriends coming tonight for a scary movie night so we will likely be having snacks and possibly a drink. I have chocolate muffins already made and made strawberry whipped cream today to go on top. I have coconut, almond chocolate made, and I can pop popcorn if anyone wants that. Looking forward to a girlie night :) Day 50 of 100 days of the real food challenge. Can't believe we made it to this point and are still doing really well. We are both feeling better, no afternoon slumps, and we have both lost weight. Hubby has lost almost 9 pounds and I've lost just over 8; great results for 50 days :) Breakfast this morning was an orange juice, a coffee (had a regular one instead of decaf this morning) and an omelet with peppers, onions and cheese. Lunch today was chicken noodle soup (from the freezer) and a chocolate muffin for dessert. Snack was a little homemade granola with milk. I really love the granola and actually crave it :) Dinner tonight was another new recipe from my Country Italian cookbook. Hubby cooked tonight and it was delicious; another keeper. He made Chicken with Tomato-Basil Cream Sauce, served with whole wheat fusilli, and green beans tossed with butter, salt & pepper. (Found the exact recipe on line and posted the link so I don't have to type it out). He made it pretty much as written except he used real butter instead of margarine. He also used the wine option instead of broth and added the fresh basil to the sauce at the end of the cooking time instead of using it as a garnish. Delicious! Posting a day later than normal due to drinking a little too much wine last night :) Another great day and it's the weekend. Yay!!!!! Breakfast this morning was granola with banana and milk along with morning decaf coffee. Snack was a 100% fruit bar while out shopping today. They were Veggie-Go's and were ok, like fruit roll-ups. Not much to them, probably better just to eat an apple or a banana. Lunch was leftover Creole Jambalaya from last night, mmmmm. Dinner tonight was cooked by Hubby, we had fish and chips with green peas. The fish was cod, dipped in whole wheat flour and fried in olive oil and then fried in butter for the second turning. We also had a new recipe for fries done in the oven, no deep-frying, and they were good and crispy. I also made chocolate muffins yesterday and tried 2 of theses after dinner; to make sure they were ok for company coming on Monday :) Another good day and not feeling blah as I did yesterday or having food cravings. Lunch today was leftover salsa chicken with brown rice and corn. Dinner tonight was cooked by Hubby - Creole Jambalaya. This time he made it less spicy so I could eat it and enjoy it, and he didn't use the smoked paprika this time, just regular paprika. I liked it much better :) Now it's already getting late, dinner was late so I probably won't snack tonight; perhaps just a drink or two while I watch a movie :)
Having a little bit of a blah day today. One of those days where you feel you should be productive and doing something but then you end up doing very little. Also finding myself having cravings lately. The last couple of days I've been craving chocolate and chips. A part of me just wants to have a binge or a splurge day. We are almost half way in our 100 day challenge and I really want to see it to the end. I hope it will pass because we are doing really well. It's the longest I've stuck with any plan or diet in several years. It does get difficult though and sometimes you do just want to say forget it and order take out or get the junk food. I'm getting tired of all the cooking, planning, prepping, and cleaning, sigh. Ok, that's my rant for the day. Now on with my day because even though I did feel a little down and had cravings and ideas of chocolate and chips dancing in my head I still stayed on track; although I did eat quite a bit of homemade coconut chocolate today. Another stormy day today, a lot of rain and freezing rain. Had to postpone preschool until tomorrow again. I will be very happy when it's spring :) Started this morning with plain Greek yogurt, blueberry jam, blueberries, toasted coconut and roasted almonds; along with a morning decaf coffee. Lunch today was the left over mushroom soup from last night. It was really good. I ended up eating a second bowl for dinner last night. Not a favorite of Hubby's as I expected but I really liked it. Snack today was a little larger than usual. I guess after a smaller breakfast of yogurt and only soup for lunch today I was finding myself a bit hungry, therefore I fried up an egg in the hole along with a glass of milk. Dinner tonight was salsa chicken with brown rice and corn. An easy and simple meal. I simply pour a jar of salsa onto 3 or 4 chicken breasts and bake until chicken is cooked. |
