It is hard to follow any diet or healthy eating over the holidays. I am enjoying myself at family and friends, eating and drinking what I want, but not going overboard. I received 3 new cookbooks for Christmas from hubby, all about healthy eating with real food ingredients.

We are still planning to do the 100 day real food challenge in the new year, and both myself and Hubby are looking forward to it :) Can't wait to get started :)

I decided to try a couple of the recipes that are on the 100 day real food challenge site. My hubby is having a hard time with the thought of eating plain yogurt. He tried it before and thought it tasted like face cream. I wonder how he knows what face cream tastes like, hmm. So I am trying the granola recipe and the berry sauce recipe.
For the granola I used walnuts instead of cashews, doubled the amount of pumpkin seeds because I'm not fond of sunflower seeds, and omitted the ginger. It is in the oven now, it has to bake for 75 minutes. It does smell fantastic though. For the berry sauce I made blueberry. It is finished and cooling in a jar. A warning regarding the sauce: even though I had it in a high-sided pot, when I used the immersion blender I got a face-full of hot blueberry sauce. I think I will blend it next time in a blender. Just want people to know that the 100 day real food challenge will not be easy. I understand this but think it will be worth it in the long run. I was at the grocery store yesterday and was looking at ingredient lists. I don't think there are any whole grain wraps that only contain a limited number of real ingredients (5 or under). I even looked at the PC Blue Menu brand and they have a long list of ingredients, some of which I didn't know what they were. I guess we will be making our own wraps for meals. I understand this will take extra time and effort and I think people starting out with this challenge, myself included, will have a lot of different things to adjust to. The good thing about this recipe though is that you can freeze them. So I plan to make as much freezable stuff and make-ahead stuff as possible. I think the key here is being prepared.

In generally we are going to try to eat more healthy, less-processed and less refined foods with real ingredients. No artificial sweeteners, never liked those anyways and avoided them. No white flour or white sugar. We will try to stick to natural foods and ingredients. In January we will start our 100 days of real food challenge as done by the Leake family who's site I have been obsessed with lately. They are a family of 4 who did the 100 day challenge back in 2010 and continue to do different challenges and in general eat healthy, real foods and share their experiences. In January we (myself and hubby) will be following the rules set out in this site. I already see there will be some difficulties here but I hope we can push through them. My hubby drinks a lot of tea with refined white sugar in it, now he will be switching to less refined natural sweeteners such as honey. In addition he drinks a lot of skim milk (I am not a big milk drinker lately due to lactose issues), but we will be switching to whole dairy products. Yup, you read that right. Whole milk and cheeses. Any questions about why this switch in dairy can be read about again on the Leake's site. It does say they drink 2% but this was in the beginning and according to the comments they quickly switched to whole. Looking forward to getting started but am also a little wary. Thank goodness beer and wine are included in the beverage list for allowable foods :) Of course everything in moderation. I have been reading food labels for years. I am always checking to see the serving size, the amount of calories, and how much fat it has. I rarely looked at the actual ingredient list. I was shocked to see that some of my everyday foods were not what they seemed.
I have recently started having a coffee every morning (I am out of work until January and now have time in the mornings) and I love cream in my coffee. I try to stay away from the artificial coffee creamers and powders because they usually do not even have cream in their ingredient list; so I use Central Dairies coffee cream. Then I looked at the ingredients. One would think it should only have one ingredient - cream. Nope. It has 6, one of which is sugar (dextrose) and a couple I'm not sure what they are. Now it's not like you can't make cream with 1 or 2 simple ingredients such as milk and cream, so why add more? The same with my table salt. I expected to see 1 ingredient, again there were four and one was again sugar. I ask "Why"? |
