Tonight we had Beef Soup. Made with a little lean beef, lots of veggies (onion, turnip, parsnip, carrot, mushrooms, green peas), and homemade beef stock. Very good, even better that I didn't make it or do any dishes :)
Hubby cooked supper for us tonight as I had to get ready for the coming week of Pre-K activities and got our Christmas tree all decorated as well :) Tonight we had Beef Soup. Very good, even better that I didn't make it or do any dishes :) It's starting to feel a lot like Christmas :)

Had another great vegan meal at EVOO this past Wednesday :) EVOO has a vegan menu all week long along with their regular menu, but on Wednesdays they have extra vegan specials :) Had drinks to start which we normally don't have very often anymore. Hubby had a Port Rexton beer (one of the few restaurants that carry them regularly) and I had a lovely vegan holiday drink special. Yes, a lot of drinks are vegan but not usually the creamy ones. This one had spiced rum and almond Baileys, coconut holiday nog, and coconut whipped topping; very good and strong ;) For an appetizer we had Stuffed Mushroom Caps, all vegan. They were delicious; very tasty and creamy. Myself and Hubby shared and he loved them as well. For mains; Hubby had his regular Mediterranean Vegetable Penne (not vegan) and I had pizza. It was 2 for 1 pizza (4-5 pm) so I ordered the Balsamic Pizza for my meal and took home the Mediterranean one for lunch the next day :) I've had both pizzas before and they are both good and vegan, but the beet one is the best in my opinion :) No dessert tonight as I didn't have the room :) Again, the food was excellent and the service was top-notch!
Some people may look at this title and think that's not true. They may think there have still been various diet posts over the past year; cutting out gluten or eating vegan, etc, but I disagree.
Over a year ago I decided to stop the dieting nonsense, here's the post where I got started :) In the past I tried every diet out there to lose weight. I tried to follow the rules perfectly and when I didn't, I felt like a failure and decided to start again. I weighed everyday and let the scale rule my emotions. That mentality is gone. Thank goodness. Now if I try following a specific way of eating it is purely for health reasons. I do it to see if I feel better health-wise, that's it. I do not weigh. Yup, you read that correctly; I DON'T WEIGH! I eat to feel better, not to lose weight. I may try to eliminate gluten or eat more veggies or try vegan eating; but if I eat something that doesn't comply I don't beat myself up about it as I did before. I simply move on and take note of how I feel after eating certain foods. It took a while to get here but I did it. Sometimes I still think about dieting and trying to lose weight again, but I push those thoughts away quickly. Too many years of deprivation and sadness to go back to that. Some meals from last week. Didn't do so good with the vegan eating and my body is definitely telling me something. I will keep working on it and hopefully get it figured out. |
