Day 27 - Busy Day Cooking :)

Had a great but busy day today.

Had a lovely cooked breakfast this morning. Thanks Hun :) Had fried eggs, homemade bacon (pork belly cured overnight in water, salt & maple syrup) and homemade hash-browns (potato, peppers, onions, savory, salt & pepper cooked in butter). Also had a couple of cups of tea.

No real lunch today. Did have a Larabar as a snack and some iced tea.

Tonight was our first night of our new dinner club. Three couples get together one night a month and cook a 3 course meal. Tonight was our turn. We decided to keep it 100% real food and everyone seemed to really enjoy it. We started with drinks and a pre-appetizer of whole grain bread for dipping in Basil olive oil and balsamic vinegar. Our app was a Caesar salad. I made the dressing and croutons from the 100 Days cookbook. Also topped with some of the homemade bacon from this morning; yummy. The main was Prosciutto Wrapped Halibut with Roasted Vegetables. Dessert was Chocolate Muffins (made yesterday) with a variety of toppings; toasted coconut, homemade chocolate, toasted pecans. strawberry jam, and homemade whipped cream. I tried to get pictures of everything but forgot about dessert until I was half-way through it; oops.

Day 26 -Elk, 1st time perhaps last time

Still doing very well and almost a month in :)

Breakfast this morning was just tea. Lunch was leftover pork, mashed potatoes and carrot from last night. Still delicious but a very big lunch. Snack today was yogurt with jam, coconut, chocolate and almonds. Dinner tonight was our first time having elk. Not sure if it was the cut we had or how we cooked it but it was tough and chewy in places. We cooked it pretty rare and it looked like it should melt in your mouth. It was a bit of a disappointment. We started dinner with a large salad, then had elk and sauteed veggies. Ended with a chocolate muffin for dessert. Made a batch of muffins for the start of dinner club tomorrow night. Had to do a quality control test of course :)

Day 25 - Yummy Pork

Somehow I forgot to blog yesterday; oops. So here it is; better late then never.

Still doing well and making better food choices. Breakfast was tea and toast. Yes I had grains. As I said in an earlier post I am trying to limit grains but not eliminate them 100%....yet. Lunch was leftover Coconut Mahi Mahi, sweet potato and asparagus from the night before. Dinner tonight was Pork Chops with Apples & Onions, mashed potatoes and steamed carrots. This was really yummy and satisfying.
For night time snack I had a beer and some chips (the chips are Boulder Canyon and only have 3 ingredients: potato. olive oil and salt). I also had a tea before bed :)

Lately I have watched a few food movies; including Fed Up and The Perfect Human Diet. They have helped reinforce the idea of eating more real, natural foods while avoiding the processed and sugar. They have also made me start to question grains. I am not sure how I feel about this yet but I am beginning to wonder if we should be eating so many grains; even if they are whole grains. 

I want to start limiting my grain intake when possible, therefore today, instead of toast for breakfast I had a salad. I find breakfast the hardest meal when limiting grains. I just need to remember breakfast can be any food and not just what I consider to be breakfast type foods. This morning I had a tea and then later made a salad for my first meal of the day. It was mixed greens, bell pepper, apple. walnuts, eggs, lime olive oil and raspberry vinegar. Very nice.

Lunch today was a bowl of Chili from the freezer. Since I didn't cook last night there were no leftovers for today; but I have plenty of freezer meals so it wasn't a problem for lunch :) I did have some bread with butter with my chili. As I said earlier, I am trying to limit my grain intake, not necessarily eliminate it all together :) Snack was some plain yogurt with Strawberry Jam, banana, coconut, almonds and homemade chocolate pieces. 

Dinner tonight was Coconut Mahi Mahi, baked sweet potato and roasted asparagus. It was actually a pretty easy and quick meal to make. The fish is simply dredged in flour, egg and then coconut (I used milk tonight instead of the egg and it was fine). The sweet potatoes were "baked" in the microwave and when done I melted some butter on them and seasoned with salt, pepper and a little chili powder. The asparagus is one of our favorite green veggie sides; but if you want something even more simple just steam some broccoli or other veggie you like.

Day 23 - Busy busy

A busy day but still managed to stick to real food options. 

Breakfast was toast and tea. Lunch was leftover trout and veggies from last night. Dinner tonight was very little. Had a later lunch and had people coming in tonight so ended up having a bowl of yogurt with almonds, strawberry jam and coconut. Had some iced tea with honey and some wine this evening, and that's it.

The last 2 nights I have been having popcorn as an evening snack. Doubt I will tonight. Tired and will soon be heading to bed.

Day 22: Quick & Easy - Fish & Veg

A great day today. First of all it was weigh-day and I lost 2 pounds. Yay! Very happy with that since last week I didn't lose and was starting to question why.

All meals and snacks were real food. Breakfast was toast and tea. Lunch was a little leftover Mac & Cheese from the other night. (Not a good enough recipe to make again though). Snack was a banana. Dinner tonight was pan-fried trout in butter, salt & pepper; along with roasted veggies. I used turnip, carrot, onion and broccoli for the veggies. Add the broccoli in later as it takes much less time to cook. I tossed them in mushroom sage olive oil from O'Leva, and seasoned with salt and pepper. Very simply but healthy and yummy meal.

Day 21 - Lamb

So, was out last night but didn't do too badly. I did sample some food but only had a sample and stopped.

Had a good day today. Meals were all fine. Breakfast was toast with almond butter and jam; along with tea. Lunch was cooked by Hubby. Had eggs and potato hash. It was delicious. Snack was an apple. Dinner tonight was grilled lamb and sauteed veggies; all cooked by Hubby. I am not a lamb person but this was some of the best I have eaten. It was delicious. Juicy and mild tasting. Hubby just did it with flavored oil and seasoning. The veggies were done the same way; fried with oil and seasoned with salt and pepper.
Also made some chocolate today. I used the Truffle recipe from Christmas. I added about 1/4 cup of maple syrup to it because it has no sweetness at all. Spread it out on a baking sheet lined with wax paper, and topped half of the chocolate with whole almonds. Placed in fridge to harden and chopped it up into bite-size pieces. It's pretty good. Needs to stay in the fridge or freezer though as it melts quickly.

Day 20 - Went To Eat Clean

A good day so far today. We are heading out tonight to a friends for a short while and I know there will be food and drinks. We shall see.

Breakfast this morning was a tea with maple syrup and cream. Then a Larabar, as I forgot to actually eat breakfast as we left to run errands and get groceries. Knowing I would get hungry while out and about we stopped at Eat Clean for lunch. I had the chili with beef (didn't eat the toast) and Hubby had the grilled chicken with veggies and rice. I had the chili before and it is very good. It is one of the few places we can actually stop and know there are real food options for us. Yay!

For dinner tonight I decided to try Mac & Cheese but I wanted a really creamy version, simple, and possibly no-bake. I tried the Mac & Cheese recipe from the 100 days site and was actually disappointed with this one. Ours was not creamy enough. I even added extra butter and cream. It seemed good at first but then we found it to dry and grainy. I don't think 1/3 cup of cream is near enough to make a creamy sauce. When I make my version I use a cup or more of milk. Think the next time I make it I will use my own version but jazz it up by using different cheeses.

Day 19 - Friday, Beer & Nachos

Nothing better than a Friday and having beer and nachos.

Good day today. Had toast with almond butter and Strawberry Jam with a tea for breakfast. Had leftover Lasagna from the freezer for lunch. Had some dried figs and almonds for a snack, along with a Matcha tea. I will admit I was having cravings today in the late afternoon and really wanted chocolate or something sweet. I resisted but will likely make my Chocolate this weekend to have here.

Dinner tonight was homemade nachos using homemade Corn Chips. The other night when I made Stuffed Peppers, I cooked a full pound of ground chicken with onions and taco seasoning. I only needed half for the peppers so the other half went in the fridge for nachos tonight. Had them with salsa and homemade guacamole. I make a very simple guac. Mash an avocado, add lime juice and seasoning (salt, pepper, garlic powder, onion powder, cilantro). That's it. Yay! Enjoyed a Hoegaarden beer with them :)

Day 18 - Better Late Than Never :)

Very busy day today but managed to stay on track 99%.

Breakfast was fine, had the last of my granola with banana and milk, along with a tea. Snack was some apple slices with my preschoolers. Lunch was a very late lunch and was leftover Stuffed Peppers from last night with avocado. These are just so good. Since I had a late lunch and I had an evening tea party booked, I didn't eat any dinner before going out. By the time I got home tonight I was famished. I ate part of a caramel cheesecake tart that I had made for the tea party (they have sugar and do not follow the real food rules). Then I had an apple, glass of milk and glass of water. Feeling better now and soon off to bed.
