Made "pasta" and sauce with veggie meatballs on Monday. Tried a new rice noodle I found at Dominion this weekend and they were really good. The noodles took 6 minutes to cook. Fried up the veggie meatballs and heated jarred marinara sauce. A great and easy meal :)
I like to keep my Monday evening meals quick and simple; as it's Monday :) Also have to try and cook some meals at home this week as we ate out a lot this past weekend; and I mean a lot, even for us :) Made "pasta" and sauce with veggie meatballs on Monday. Tried a new rice noodle I found at Dominion this weekend and they were really good. The noodles took 6 minutes to cook. Fried up the veggie meatballs and heated jarred marinara sauce. A great and easy meal :) Tonight's dinner was a new recipe: "Aztec Quinoa" from The PlantPure Kitchen cookbook. Had high hopes for this. It was okay but not great. It does have potential though. Think I will try it with rice instead of quinoa next time. I also didn't have any avocado for a topping as they were already gone brown when I cut into them :( I think it would have been much nicer with the avocado. I included a picture of the canned tomatoes I have been using lately. Found these in the organic section at Dominion and I love them. They taste so good, way better than regular canned tomatoes. Love the fire roasted taste. Using these all the time now whenever canned tomatoes are required :)

After having Piatto on Thursday night for supper, we ended up having it again early Sunday evening. It seems I had a free dessert coupon, which I forgot to take with me on Thurs, and it was only good for the month of January. So, we had to go ;) Did a full meal deal this time (not just pizza). Shared the olives for an app. The pic doesn't look very appetizing but they were delicious. I have really come around to olives. I remembering hating them but now love them :) I had my regular pizza: The Stephanie. Hubby changed it up a bit and tried the Vegetariano Calzoni. He enjoyed it but said it needed more tomato sauce. Now he is a tomato sauce snob so everyone may not agree. I think a dipping sauce of tomato sauce may be a good idea as too much sauce in the calzoni will likely make it soggy. For dessert we had cappuccinos and a free tiramisu dessert (the whole reason for going was to use that coupon, right ;) lol). Food was fantastic as always. Service was good as well, and we even tried a different location (Elizabeth Ave) this time around, as we usually go to the downtown restaurant.
On a different note: Regarding food I eat and my health. I didn't have any problems after having pizza on Thursday evening but after having it two evenings within a short time frame, I did end up with my hands hurting quite a bit the next morning. Likely from the wheat or gluten I suspect. I also expected to really pay for the dairy I consumed as I haven't had very much at all lately. It was better than expected. Not great but not horrible. Went to dinner at Magic Wok with a larger group of friends for a birthday celebration :) I had checked out the online menu, before going, to get some idea of the options. I didn't really want any meat today (especially after having pizza yesterday) and Hubby didn't want anything deep-fried. We ended up ordering plain rice, mixed vegetables, and a Singapore Noodle dish made mild without the meat. It was all delicious :) The service was wonderful as well :) The rest of the group ordered a pile of different dishes to share family style. Everyone enjoyed it!
Had tickets to see "Baker's Dozen: 12 Angry Puppets", downtown, on Thursday night. We decided to have dinner before the show and Hubby was in the mood for Piatto. Now Piatto does offer a vegan option on their menu, but I am not really a traditional pizza lover. The only pizza I tend to get there is "The Stephanie". It's not tomato based, but has balsamic vinegar along with prosciutto, pears, and goat cheese. I go easy on the cheese but the goat cheese doesn't seem to be as problematic for me. They also have a gluten-friendly option for crust :) I had the regular crust as I find a little wheat tends to usually be okay for me, and this pizza dough also seems to treat me better than most. It was delicious as always and service was great. We were the 3rd table when we sat but they were completely full when we finished. The beer in the pic is Hubby's :) They have their own special Piatto brew there and it is very nice. Light and tasty and very similar to beer we tried while travelling in Italy :)
Tried another new recipe from the "Oh She Glows Every Day" cookbook tonight. Unfortunately it wasn't very good. It was a Sun-dried Tomato Pasta Recipe. There was a sauce made in the blender with soaked cashews, sun-dried tomatoes, garlic, lemon juice, salt, olive oil, and water. Not my favorite sauce an it was very thick, I even added a little more water but still really thick. I also found it a very strong, almost overpowering, flavor. I used my rice pasta which I use for most pasta dishes now. The rice pasta was mixed with spinach, more sun-dried tomatoes, basil, salt, crushed red pepper, and lemon zest. I topped mine with fresh tomatoes. I didn't even eat all of mine and the portions were not very big. Thankfully, I didn't mix all the sauce with the pasta as the cookbook suggests. The book says that the sauce doesn't hold up well when mixed together and left. So I may eat the pasta tomorrow with some olive oil instead of the cashew sauce.
That's 2 recipes from this book so far. Tonight's is a definite no-keeper and last night's was alright but not great so will likely not bother to make it again, sigh. I had high hopes for this cookbook but not looking good so far :( Tried a new overnight oat recipe for breakfast and it's really good :) Nutty and chocolaty; very yummy! Almond Butter & Cocoa Overnight Oats.
Tonight I tried a new recipe from my new "Oh She Glows Every Day" cookbook which I got for Christmas. Tonight was the: Loaded Sweet Potatoes. They looked quick, easy, and tasty; my favorite combination for a recipe :) I made it even quicker as I microwaved the potatoes instead of baking them. I also made my regular guacamole instead of the avocado crema which the book suggests. They are pretty much the same except no blending. This recipe was good but not great in my opinion, although Hubby thought it was really good. I felt the potatoes were lacking something.
Wanted an easy but good dish to make for Monday evening, as it's a Monday ;) Decided on my usual Chicken Fried Rice but I really didn't want the chicken so decided to try it with chickpeas instead. I made it as the recipe states except for adding a can of chickpeas (canned ones which I boiled first) instead of chicken. It's not a vegan or vegetarian meal as I still added the eggs to it, but you could easily leave them out. It was really good. Chicken was not missed at all by myself or Hubby :) Will likely make this again! If you missed yesterdays post regarding the new recipe for Burrito Bowls you should take a look. Had them leftover today for lunch and they were fantastic. Can't wait to make and eat them again :) The recipe came from a cookbook so there is a pic of the recipe posted.
Stay tuned for some new recipes from my new "Oh She Glows Every Day" cookbook later this week :) Tried another new recipe from my new Minimalist Baker cookbook: Burrito Bowls! They were great. My only complaint with this recipe and the cookbook in general is the prep times. This recipe was a 30 minute or less weeknight recipe; it took me 60 minutes. The only way I can see that happening is if they have all the ingredients prepped and ready to go. Sorry, 5 minute prep time to chop peppers, onions, tomatoes, fresh cilantro, etc and get everything ready to go in when needed; not happening. My rice and beans were done awhile before everything else was even ready. These burrito bowls had a lot of smaller recipes within; you made a rice recipe, a bean recipe, a veggie recipe, a corn salsa, and a guacamole. All were simple with only a handful of ingredients. I left my rice plain as I figured there was already enough going on with everything else. The corn salsa was great and will likely be making that again for other recipes. Salsa would be nice with this as well; we forgot until after we were finished.
Went to Oliver's for brunch on Saturday! This is one of my favorite brunch places and I have a favorite dish that I order 99% of the time; the Beef Tip Skillet. It is soooooo good. I actually didn't order it this time as I was craving a good Eggs Benedict and they a great sounding one, with bacon, as a special for the day :) I had the Eggs Benny special without the cheese and Hubby had the Omelet special without the cheese or hash-browns. Both were delicious. I was not disappointed with my change in ordering :) We have been going to Oliver's for such a long time now that the regular staff recognize us and we often chat. When we stopped in on Saturday none of the regular staff seemed to be working. While I was eating my meal I felt a tap on my shoulder. One of the regular staff had stopped in with her daughter for brunch and she said hi to me and actually made a comment that I had ordered something different :) lol. See, we do eat there a lot and I usually get the same brunch dish, it's that good :)
