Was craving a Mediterranean type dish this past week. Wanted something with artichokes and olives. Was thinking with pasta and maybe shrimp. Came up with this: Mediterranean Pasta with Shrimp. Didn't follow any recipe, just put together ingredients I wanted and I thought sounded good together. I did jot down the recipe afterwards for future reference :) It turned out great, and was just what I wanted. So yummy!

I know it's only Tuesday but already having a much better week than I have been lately. Feeling much better and not in a slump anymore. I was falling into a meal plan rut of planning meals that I didn't really want as I was trying to plan mostly vegan meals. I found myself dreading suppertime and often forgoing the meal plan. I was getting tired of most dishes and felt stuck. This week is going much better as I decided to plan meals that I was looking forward to eating this week; regardless if they were vegan or not. Tonight we did have a vegan meal but it was a recipe we tried before and both really enjoyed: Burrito Bowls from The Minimalist Baker cookbook. One of the best vegan cookbooks I own so far. I know they are called bowls but had it on a plate tonight :) lol. Yesterday we had Egg Roll Stir-Fry, another great and easy recipe. Sunday was a spur of the moment Chicken Noodle Soup since we had leftover chicken. Feeling good and looking forward to the rest of the week!
