Day 17 - Recipe Let-down

I tried a new recipe tonight that I had really high hopes for and it was a big let-down, sigh.

Breakfast was the usual granola and milk (no banana today) and a coffee.

Lunch was leftover pasta with broccoli and tomatoes from last night's dinner.

I was originally planning to make tuna noodle casserole for tonight's dinner because Hubby has a work dinner therefore this is the night to make something I love that he doesn't. Then yesterday I saw a post regarding slow cooker macaroni and cheese that looked heavenly. A good, cheesy, creamy mac and cheese is one of my favorite meals. Today I went out and bought the ingredients needed for the mac and cheese recipe. I felt a little guilty while making it just because it called for so many high-fat ingredients. There's 3 types of cheese, butter, and cream. I figure I'll make it as is and play with the recipe later as needed.

Well I just had a bowl and what a disappointment :( It was very greasy, clumpy and bland. It looks like the cream may have separated and the entire dish has white lumps that looks like curdled milk. There's way too much grease floating around in it that there are pools of grease sitting on the bottom when you scoop it up. It didn't call for any spices, not even salt or pepper. I figured with all that cheese it would be salty enough. I did top it with pepper, but it was still pretty bland. Also, some of the noodles were pretty hard, those touching the outside of the dish I imagine. They were pretty dark and over-cooked, and I only cooked it for 2 hours instead of the 2 and a half recommended in the recipe. This was a big let-down. Now I have leftovers that I don't even want to eat tomorrow and I hate the thought of throwing out food :( Oh well, fingers crossed the next recipe I try will be a keeper.

No snack as of yet today but may have something later, seeing I didn't eat much dinner. The last few nights I have been having popcorn with melted coconut oil and sea salt.....and I love it. Hubby is not as struck with it because he is not a lover of coconut. I think it tastes fantastic, along with a little homemade chocolate of course :)
