Breakfast was Paleo Granola with extra almonds and coconut. I also had a tea. Lunch was egg in a hole :) I fried up eggs in bread in a frying pan with butter. This is fav from my childhood :) I also had a glass of milk.
It turned out to be a snow day here today. So, being housebound I had a productive day preparing for upcoming preschool classes. Breakfast was Paleo Granola with extra almonds and coconut. For dinner I really wanted a soup or stew but had no plans to make this so didn't really have the ingredients on hand. With the grocery stores closed, and not wanting to venture out anyways, I was lucky to find some frozen Beef Stew containers in the freezer. Yay! Stew it is. Nothing like a good hearty stew on a blustery, snowy day. Had a bowl of stew with some whole grain toast and butter.
