Day 41 - Valentine's Day

Happy Valentine's Day to everyone.

Another good day. This morning for breakfast I had yogurt with strawberry jam, almonds and coconut; along with my morning coffee. I am out of granola and need to make another batch.

Lunch today was leftover Chicken & Pasta in a Creamy Tomato Sauce. Still great. Excellent recipe :)

Snack today was a Larabar, cheese and rye crackers.

Can anyone say OCD?
Dinner tonight is being made by Hubby, Yay! We are having pan-fried cod, roasted asparagus, and oven fries. The cod is simply dredged in whole wheat flour, then pan-fried in olive oil first and finished with butter. The fries are cooked in a convection oven (supposedly this is what makes them great, according to Hubby), they are simply potatoes, cut into fries and tossed in olive oil, herbs and spices. They have to cook in a single layer, not touching, to get more authentic fries. The asparagus we have been making for years, it's simply roasted in the oven with olive oil, herbs and spices. I am having a couple of beer tonight as well, seeing it's Friday and Valentine's day :)

We have had a lot of seafood this week. Odd for me but Hubby is loving it. Had a scallop dish, chowder, cod au gratin, and pan-fried cod tonight. I will admit I love a small amount of seafood and really wouldn't bother with the rest, but everything this week was pretty good and some recipes were excellent.
Now to make a meal plan for next week :)
