Breakfast this morning was plain Greek yogurt, with blueberry jam, blueberries, roasted almonds, and toasted coconut. No coffee this morning. I have had problems with caffeine in the past. I have a very low tolerance for it and it causes me to get very shaky, greatly affects my sleep, makes me pretty hyper and also causes heart palpitations. I haven't been having any symptoms lately and I have been having one coffee in the morning, but I had heart palpitations last night. Not sure if it's related to the caffeine at all, especially with so many hours in between, but it was scary enough to put me off my coffee this morning :(
Lunch today was the leftover Stuffed Pork Tenderloin, mashed potato and peas from dinner the other night. It was great for dinner but not as great as leftovers. The pork was a little tough and dry after reheating. I wouldn't bother to keep leftovers of this again.
Snack was a Larabar while out running errands and visiting.
Note: The recipe also made a lot of bruschetta mix, you can definitely cut it back a little. Maybe my tomatoes were too big but I used 6 tomatoes as the recipe called for, while the recipe only making 4 servings.
