Toast and tea for breakfast. Leftover Pasta & Sauce with Sausage from last night's dinner. Very good. I find pasta and sauce is great as a leftover because it holds up so well; it can even be better the next day as the flavors get a chance to meld. Snack was dried figs and nuts.
Dinner tonight was a couple of new recipes. I made a Potato, Spinach & Fish Casserole (I used the last of my local cod) and it was a really nice recipe. The serving sizes are pretty large as well. I will likely made this one again. For dessert I made a Cinnamon Apple Crisp to use up some extra apples I had laying around. This recipe was good but I found it a little dry. Hubby thought it was great as is :) I didn't serve it with any cream or ice-cream either; which would work excellent with this dessert. Next time I may try omitting the whole wheat flour (not sure what that added to the recipe as is) and I may increase the amount of apple and possibly add some apple sauce next time. Overall a very good day :)
