First: It's the first time I have ever cooked with lentils, and it turned out really good.
Second: It was completely vegan and tasty.
Third: Hubby doesn't like Shepard's Pie but he ate this :) (He didn't love it but he ate it so I'll take that).
This time, I ended up using half a large red onion instead of the leek. I am not very fond of leeks and was a little wary on using it in a new recipe that I had high hopes. I also did not use any soy milk (or any other milk) for the potatoes. I never do when making regular mashed potatoes or regular Shepherd's Pie; I like my potatoes simple with butter or margarine. This time I used vegan margarine but I will admit I am still torn on this product. I like the idea of real, whole foods; (margarine doesn't fit the category) but Hubby eats margarine now over butter for his health and I am finding dairy to be a problem, so vegan margarine won out tonight.
Next time: I will likely increase the amount of carrot and peas, just for personal preference. I am also unfamiliar with cooking with lentils. I used green lentils and cooked according to this recipe (even though the bag had a shorter cooking time). I still found them to be a little hard. Maybe that is how lentils are, I'm not sure. May try the brown next time to see if they are a little softer.
